    1. You can use sweeteners like jaggery, coconut sugar, raw cane sugar, maple syrup, or date syrup. If you’re using jaggery or any liquid sweetener, add it after turning off the heat so that the milk doesn’t curdle. Adjust the quantity to taste.

    1. I use organic tea from pure and sure brand and ootea and a few more whose names I do not remember now. You will find these easily online. Sure, I do plan to add more instant pot recipes.

  3. Hi, what is the quantity of spices to be taken if less tea (eg, 1 cup) is to be prepared or more tea (for 4 to 5 cups) is to be prepared? Thanks for all recipes for a beginner like me.

    1. for 1 cup of tea, you can use 1 small green cardamom, ¼ inch of cinnamon (a tiny small piece of cinnamon) and 1 clove. ginger can be ¼ teaspoon of crushed or grated ginger. for 4 to 5 cups, 4 green cardamoms, 1-inch cinnamon, 3 to 4 cloves and 1.5 to 2 inches, ginger can be added.

    Which cinnamon do i use – i see 2 varieties in shops…one variety in rolls (i suppose they call it ceylon cinnamon) & the other in pieces… Are both the same & both varieties used for making cookies also?

    1. meera, one is ceylon cinnamon (real or true cinnamon) and one is cassia cinnamon. i use true cinnamon and not cassia cinnamon.

      cassia cinnamon is not good for health and can have adverse effects. in fact when buying cinnamon, i am very careful. everywhere in India they sell cassia as cinnamon.

      the shopkeepers also do not know the difference at times. cassia has a thick woody texture whereas ceylon cinnamon does not have a such a woody texture.

      cassia also has a strong aroma as compared to ceylon cinnamon. you can read more difference on the web.

      by now i have become an expert in distinguishing between both the cinnamon varieties.

      i would strongly recommend to use real cinnamon (ceylon cinnamon) for a true flavor as well as health benefits.
