    1. thanks winnie. tawa mushroom can be made easily in a shallow pan or a kadai. there will be some minor changes in the taste, but overall the final taste of the dish will be good.

  2. Dear Dassana,
I have been following your recipes for a year now and I love each one of them absolutely. They are a sure shot success.!!Whenever i have not followed the quantities correctly ,the dish has turned out spicier. So they are perfect to that extent!! Congratulations

  4. This was such a great recipe! I love mushrooms and I love to try recipes that feature them. Normally I sautee them in balsamic vinegar, soy sauce, and a little brown sugar. Mom didn’t cook mushrooms much when we were kids. So I enjoyed your recipe very much! It was delicious with chapati and kadhi. Thank you as always for a lovely recipe 🙂

  5. dassana,I have a iron pan.now I stopped using it because of rust and rotis smells different…can you suggest some good iron pan s in India or how should I select a iron pan..

    1. shree, i have two iron pans. one is this one shown in the pics. this one i got locally from the market. there is another one i use only for making dosa and that one was purchases from a small temple town near kolhapur. i have also recently purchased a large lodge cast iron skillet from amazon, but not yet made anything in it.

while selecting feel the weight. it should be heavy. look at the finish. it should be smooth. if possible you can ask whether the metal is only iron or a mixture of iron with any other metal. rusting happens if care is not taken.

always smear some oil on the pan while storing it. due to humidity rusting can happen, especially if you live in a humid place. after washing, use a non abrasive kitchen towel, wipe the pan and then store.

i do not spread oil on the two iron pans as i do not live in a humid place. but i did spread oil on the lodge cast iron skillet and have stored it. the rust can go away and you can use this pan.

  6. Really appreciate the various options you give for ingredient measure in your recipes (gms or 2 nos medium or large or 1 cup etc). I find that helpful. Thank you.
