Sweet corn schezwan fried rice recipe with step by step photos – spicy and tasty rice dish made with sweet corn, capsicum rice and herbs. A vegan recipe.

Sharing a variation of Schezwan fried rice. in the recipe sweet corn is added, thereby giving light sweet hints while having the spicy rice. The combination is too good.

Usually while making this recipe, I just add mix veggies. However, during our stay in one of the jw mariott hotels, the veg schezwan fried rice they served would have both sweet corn and green peas. Surprisingly the sweet corn tasted so good with the remaining veggies. So the idea comes from there or else I would have never thought of adding sweet corn in this rice dish.

In the recipe though, I have only add green bell pepper aka capsicum along with lots of sweet corn kernels. You can if you want reduce the sweet corn and add some veggies instead.

The taste of any schezwan fried rice largely depends on the taste and flavor of the schezwan sauce. So use a good quality schezwan sauce or you can also make schezwan sauce at home.

You can just serve this dish without any accompaniment as it tastes good on its own. Though a side Chinese gravy dish like veg manchurian or gobi manchurian will also taste good.

How to make sweet corn schezwan fried rice

Cooking rice

1. Rinse ½ cup basmati rice very well in water till the water runs clear of starch. Then soak rice in enough water for 30 minutes. After 30 minutes drain the rice and keep aside.

2. In a pot or pan heat 3 cups water along with ¼ teaspoon salt. bring the water to a boil on a high flame.

3. Then add the rice. gently stir or shake the pan.

4. Cook the rice on high flame, till it becomes al dente. This is the rapid boiling method of cooking rice. Hence no need to cover the pan with any lid.

5. The rice should be al dente, meaning almost cooked. If you want you can cook the rice more.

6. Then in a colander or strainer, strain the rice. Gently rinse the rice with running water. This will stop the cooking of the rice. Cover and keep the rice aside till it cools down. The rice has to be cooled at room temperature before you add it to the stir-fried schezwan corn.

7. When the rice is cooking, you can steam or boil one medium to a large corn cob. You can steam the corn cob in a steamer or a pressure cooker. If pressure cooking, then pressure cook for 2 to 3 whistles in 1.5 cups water. You can also use 1 cup of tinned sweet corn kernels. When the corn cob becomes warm or cools down, slice off the corn kernels from the cob. Be careful while slicing the kernels. You will need about 1 cup of corn kernels.

8. Heat 1 tablespoon sesame oil in a wok or pan. Add ½ teaspoon finely chopped garlic.

9. Saute garlic till they turn light brown.

10. Add ⅓ cup finely chopped spring onion whites and increase the flame.

11. stir fry the onions on a medium to high flame till they turn translucent.

12. Then add ⅓ cup finely chopped capsicum and ½ teaspoon chopped celery (optional).

13. Stir fry on medium to high flame.

14. Stir fry till the capsicum is half cooked.

15. Now add the steamed corn kernels.

16. Stir and mix very well.

17. Lower the flame and add 2 to 3 tablespoons schezwan sauce and ¼ teaspoon black pepper powder. you can add more schezwan if required. I added 3 tablespoons schezwan sauce.

18. Stir and mix very well.

19. Add the steamed rice.

20. Add salt.

21. Mix the rice and salt very well with the entire schezwan and corn mixture.

22. Add ¼ teaspoon rice vinegar and ½ to 1 teaspoon mirin or sweet rice wine. Skip if you do not have these. mix again.

24. Switch off the flame and add ¼ cup chopped spring onion greens. Reserve a few spring onion greens for garnish.

25. Mix and garnished with some spring onion greens. Serve hot with a side Chinese gravy dish like paneer manchurian or chilli mushroom.

Ingredients

for cooking rice

  • ½ cup basmati rice or 2 to 2.5 cups cooked rice
  • 3 cups water
  • 1/4 teaspoon salt

other ingredients

  • 1 medium corn cob or 1 cup steamed corn kernels or canned sweet corn
  • 1 tablespoon sesame oil
  • ½ teaspoon finely chopped garlic
  • cup finely chopped spring onion whites or 2 small to medium spring onions (scallions) - chopped
  • cup finely chopped capsicum (bell pepper) or 1 small to medium capsicum - chopped
  • ½ teaspoon chopped celery - optional
  • ¼ teaspoon black pepper powder or add as required
  • 2 to 3 tablespoons schezwan sauce - i added 3 tablespoons schezwan sauce
  • ¼ teaspoon rice vinegar - optional
  • ½ to 1 teaspoon mirin or sweet rice wine - optional
  • ¼ cup chopped spring onions - reserve a few for garnish
  • salt as required

  • Mix and serve hot garnished with the spring onion greens.

Notes

- you can add some soy sauce in the recipe too, if you want.
- more or less of schezwan sauce can be added as per your taste.
- skip celery, rice vinegar and mirin, if you do not have these. Instead for a slight sour touch, you can add vinegar or lemon juice.
- the recipe can also be made with leftover cooked rice.
