at times i make a cabbage coleslaw or a mix veg coleslaw to make sandwiches or use them in burgers. this is an easy coleslaw sandwich recipe and gets done quickly if you have a food processor or food chopper for chopping the veggies.

i have used a mix of cabbage, carrots and capsicum. i have also added steamed corn kernels. instead of corn kernels you can also add steamed or boiled green peas. do note that all the veggies are raw except the steamed corn kernels. if you want you can blanch the cabbage leaves. i used store brought eggless mayonnaise to make the coleslaw. you can use homemade too if you have it. i usually do not grill these sandwiches, but you can toast or grill them if you want.

basically coleslaw is a cabbage salad which is said to have originated from netherlands. it has a mayonnaise dressing and in some instances sour cream is also added.

coleslaw sandwich makes for a good light breakfast or brunch or snack. you can serve them plain or accompany them with some french fries or potato wedges. these sandwiches also make a nice finger food for parties.

ingredients (1 cup = 250 ml)

  • ¼ cup finely chopped cabbage (patta gobhi)
  • ¼ cup tightly packed finely chopped carrots (gajar)
  • ¼ cup boiled or steamed corn kernels (makai or bhutta) - OPTIONAL
  • 2 tablespoons finely chopped capsicum - can use green or red or yellow capsicum (bell pepper or shimla mirch)
  • 2 tablespoons finely chopped spring onions or onions
  • ¼ cup mayonnaise, eggless or vegan
  • ¼ to ½ teaspoon black pepper powder (kali mirch powder)
  • 1 teaspoon sugar or add as required
  • ½ teaspoon lemon juice or add as required
  • 1 pinch salt or add as required
  • some dried herbs like oregano, thyme, basil or mixed herbs, add as required - OPTIONAL
  • red chili flakes or finely chopped green chilies, add as required - OPTIONAL
  • butter as required - OPTIONAL
  • 8 to 10 slices of bread - whole wheat or multi grain or brown or white bread

how to make coleslaw sandwich recipe

  1. first rinse and finely chop the veggies in a food chopper or a food processor or with a knife. you will need ¼ cup finely chopped cabbage, ¼ cup tightly packed finely chopped carrots, 2 tablespoons finely chopped capsicum and 2 tablespoons finely chopped spring onions or onions. also add ¼ cup boiled or steamed corn kernels. you can skip corn if you want.

  2. then add ¼ cup mayonnaise, ¼ to ½ teaspoon black pepper powder, a pinch of salt and 1 teaspoon sugar. 

  3. add sugar and black pepper powder as required. 

  4. then add ½ teaspoon lemon juice. if you want, you can also add some red chili flakes or some dried herbs like oregano, thyme, basil.

  5. mix everything very well. check the taste and add some more salt, sugar or black pepper if required.

  6. take the bread slices and spread some butter on them. this is an optional step.

  7. now spread veg mayonnaise stuffing on the bread slices.

  8. place on top the remaining buttered slices and slice the coleslaw sandwiches. 

  9. serve coleslaw sandwiches plain or accompanied with some french fries.

5. then add ½ teaspoon lemon juice. if you want, you can also add some red chili flakes or some dried herbs like oregano, thyme, basil. for a spicy taste, you can add 1 green chili (finely chopped). i have made these sandwiches with green chilies for myself and they taste good.

6. mix everything very well. check the taste and add some more salt, sugar or black pepper if required.

7. take the bread slices and spread some butter on them. this is an optional step. i have used whole wheat bread. you can use any bread of your choice.
