this quick and easy ice cream recipe is a basic ice cream made with cream and condensed milk. this is a soft, smooth and velvety ice cream recipe (without any ice crystals) and a recipe that does not take much time. there is no cooking involved and also no ice cream maker is required. i had found out about these 2 or 3 ingredient ice cream recipes a year back from kitchn.com. i have tried this vanilla ice cream a couple of times as this simplest ice cream is a favorite at my place.

the best thing about these these ice cream recipes are that they are quick to prepare and do not need any cooking or ice cream maker. so basically these are no cook and no churn ice creams. the ice cream mixture also gets done in 15 minutes. the rest of the time is the time taken for freezing.

in this basic ice cream recipe i have used vanilla extract to give a vanilla flavor. in fact this recipe is very adaptable and you can have any flavored ice cream by adding various flavoring ingredients. so you can use this ice cream recipe base to make various types of ice creams.

variations possible with this ice cream recipe:

  • chocolate ice cream – for a chocolate flavor, then add 2 to 3 tablespoons cocoa powder or drinking chocolate in a bit of warm milk, whisk well and fold along with the condensed milk.
  • rose ice cream – for rose ice cream, add 2 to 3 tablespoons of rose syrup.
  • butterscotch ice cream – for butterscotch ice cream, add ½ cup of crushed praline or butterscotch chips in the ice cream.
  • lemon ice cream – add 1 to 2 tablespoons of lemon juice and ½ teaspoon of lemon zest.
  • mango ice cream – add 1 cup mango pulp
  • tutti frutti ice cream – add ½ cup of tutti frutti (candied papaya peels). i have shared the tutti frutti ice cream recipe earlier.
  • dry fruit ice cream – about ½ cup of chopped dry fruits can be added.
  • pistachio ice cream – add ½ cup chopped or coarsely crushed pistachios.

this quick no churn ice cream was very good for my expectation as it was soft, smooth, creamy and delicious. since only whipping cream and condensed milk is used, there is no possibility of ice crystals in this basic 3 ingredient ice cream recipe.

you can use whipping cream having 30% to 50% fat. i always add 2.75 to 3 cups of cream for 1 can of sweetened condensed milk  (400 grams). this much sweetness is fine for us. for the ice cream to be more sweet, you can add 2 to 2.25 cups.

do use a good quality vanilla extract or use real vanilla powder. i usually make vanilla extract at home. i add the vanilla extract to various recipes like eggless vanilla cake, chocolate cake, black forest cake etc. you can also use 1 vanilla bean to make this ice cream. if you do not have vanilla extract or essence, you can add ½ teaspoon cardamom powder, some soaked saffron strands in a bit of warm milk or any fruit or plant based extract. in fact you can use this recipe and make variety of different flavored ice creams.

ingredients (1 cup = 250 ml)

  • 1 can chilled sweetened condensed milk OR 400 grams sweetened condensed milk
  • 2.5 to 2.75 cups chilled whipping cream - 35% to 50% fat
  • 2 teaspoons vanilla extract OR 1 teaspoon vanilla essence OR 1 vanilla bean OR 1 teaspoon vanilla powder
  • some grated chocolate for garnish - OPTIONAL

how to make ice cream recipe

  1. in a large bowl, take 2.5 to 2.75 cups of chilled whipping cream (30% to 50% fat). add 2 teaspoons vanilla extract. if using vanilla essence, then add 1 teaspoon of it.

  2. with an electric beater at full speed, begin to whip the cream. timing will vary depending on the fat content in the cream. both for amul fresh cream and amul whipping cream, it takes about 8 to 10 minutes. 

  3. also be careful while whipping and do not whip too much, as then the cream would get churned into butter.

  4. whip till stiff peaks are formed. you can also whip till soft peaks. if using 25% fat cream, then you can whip till soft peaks.

  5. now add 400 grams of chilled sweetened condensed milk (about 1.6 cups).

  6. fold gently but very well. also remember not to overfold as then the ice cream mixture can fall flat.

  7. remove the vanilla ice cream mixture in a container or box and then cover it tightly. or you can cover the same bowl (if its freezer safe) with a tight fitting lid or aluminium foil.

  8. freeze till the ice cream is set. before serving, keep the ice cream box or bowl for some minutes at room temperature. then using a scoop, remove the ice cream.

  9. serve vanilla ice cream. you can sprinkle some chocolate chips or grated chocolate or candied fruits or even tutti frutti from top if you want.

    • yes sweta, you can use 1 teaspoon vanilla essence. i have mentioned the amount already in the recipe card as well in the step by step pics.
