posting a soup recipe after a long time. this mushroom soup recipe is simple, easy and taste too good. you would love sipping this soup in a cold weather as well as in monsoons. accompany the soup with a crusty bread or some noodles or rice.

this is a clear soup recipe. i have not used any veg stock in the recipe and cooked the mushrooms in water. if you have veg stock, you can use it. you can also check this one pot quick cream of mushroom soup and clear veg soup recipe.

any variety of mushrooms can be used. i have used white button mushrooms which i easily get here. celery is also added in the soup which gives a really good flavor. if you do not have celery, you can skip it. without celery, some flavor profile will be missing. so celery is optional but highly recommended.

ingredients (1 cup = 250 ml)

  • 200 grams white button mushrooms or 2 to 2.5 cups sliced or chopped mushrooms
  • 2 cup small spring onions, sliced or ¼ sliced spring onion whites
  • ½ teaspoon finely chopped garlic or 2 to 3 small to medium garlic cloves (lahsun) - finely chopped
  • ½ inch ginger, chopped or ½ teaspoon finely chopped ginger (adrak)
  • 1 teaspoon finely chopped celery (optional)
  • ½ teaspoon crushed black pepper or pepper powder or add as required
  • 1 teaspoon gluten free naturally fermented soy sauce or regular soy sauce - add as required
  • 3 cups water
  • 5 tablespoons chopped spring onion greens
  • salt as required

  1. rinse, wipe and slice or chop 200 grams white button mushrooms. 

  2. slice 2 small spring onions (about 1/4 cup sliced spring onion whites). also finely chop 2 to 3 small to medium garlic cloves, 1/2 inch ginger and 1 small celery stem.

  1. heat 1/2 tablespoon sesame oil in a pan. then add the chopped garlic and ginger. saute for a few seconds.
  2. then add the sliced spring onion whites & saute for a minute. reserve the spring onion greens to be added later.
  3. now add the sliced mushrooms and chopped celery.
  4. stir and saute for two minutes on medium flame.
  5. then add 3 cups water and stir.
  6. simmer the soup for 4 to 5 minutes on a low to medium flame without a lid.
  7. add 1 teaspoon gluten free naturally fermented soy sauce or regular soy sauce. you can add less or more soy sauce as per taste.
  8. then add 1/2 teaspoon crushed black pepper or pepper powder and salt as per taste. keep a check on salt as soy sauce already has some salt in it.
  9. cover with a lid and simmer mushroom soup on a low to medium flame for 15 minutes or till the mushrooms are cooked.

  10. do check once or twice when the mushroom soup is simmering.

  11. when done, switch off the flame. check the taste and add more soy sauce, black pepper or salt if required.
  12. lastly add 5 tablespoons chopped spring onion greens. you can also add bit of rice vinegar, if you want.
  13. serve mushroom soup hot with or without any accompaniment. 

  14. the soup can also be served as a starter in a main course.

  1. I made it and it was super yum.
    My doubt is When should we use normal vinegar and when should we use apple cidar vinegar?

    • thanks pallavi. you can use any vinegar any time. does not make much difference unless you use a dark colored vinegars.

  2. Recipe is good,but if you have any alternative to soy sauce,corn flour ( in some soups) soy based product or gluten product that will be really helpful.

    • kirti, try using gluten free soy sauce. its available even in india in super stores. also instead of corn starch, you can use rice flour or tapioca flour as a thickener.

  5. Made this today, a great light soup, normally mushroom soups have a lot of cream in them or roux, and what do you know after a hot spell it rained here. Just the right weather for soup:)

    • thanks anu for the review. yes mostly mushroom soups have a lot of cream or roux. but these heavy soups also taste good once in a while. for everyday food light and clear soups are a good bet. of course monsoons and winters are best times to have soups 🙂
