  1. Wow this was INCREDIBLE!! Loved by vegetarian and Omni alike. I am on the opposite coast of the only Thai restaurant I’ve been to that had vegetarian tom kha that was worth writing home about. This recipe made just as delicious, if not more delicious, soup!

    My Omni partner was floored it didn’t have chicken to help flavor it. I used better than bouillon’s stock bases: half veggie base, half no-meat “chicken.” Omitted the tomatoes and shiitake powder.

    Kept the Thai chilies at 7 even though I tripled the recipe—mine were quite spicy! Absolutely bonkers good, high on the can’t-wait-to-remake list!5 stars
