  1. Hi Dassana

Your dal vada recipe sounds very tempting and has so many great reviews as well.

Can I follow the same receipe and make the vadas in air fryer?

What is it I need to do more for making the vadas in air fryer so that it comes out as good as when it’s deep fried?

    Thank you!5 stars

    1. Yes of course! Shape them into round patties. Don’t make them thick. Spread or brush oil all over and air fry.

Use a moderate temperature of 180 degrees Celsius or 350 degrees Fahrenheit. Air-fry for 15 minutes or until they look crispy and golden.

Half way while frying (say after 7 or 8 minutes), remove the basket tray from the air-fryer and flip each dal vada with a spatula. Brush oil again on the top if you prefer and continue to air-fry until golden.

  2. Made the spicy version of Masala vada today. Doubled the recipe. Before I completed frying, half were already eaten! Everyone loved it. Came out excellent, just as we get in restaurants. Thanks!5 stars

  3. I made it today, half of it disappeared even before I finished the whole batter!!?
Amazing recipe, easy to follow. Thanks for sharing.5 stars

  4. If baking instead of frying do you the what temperature and time limit should be used? I can’t wait to try your recipe. Looks amazing!

    1. you can bake at 180 degrees celsius in a preheated oven. time taken will depend on the oven type. so an approx 15 to 25 minutes can be the time for baking.

  5. Hi, I made this vadas by adding grated coconut as we don’t eat onion & garlic & the vadas turned out very tasty. Everyone just loved the vadas. Thank you so much for sharing this recipe as your recipes are always easy & best to make.5 stars

    1. welcome neha. you can easily skip the onion and garlic. grated coconut is a good addition. thanks for sharing this as well as the feedback on the masala vada recipe.

  6. Respected Ma’am, I tried this vadas without mixing onion as we don’t eat onion and garlic. I made little variation by adding fresh grated cocunut and little baking soda. The vadas turned out to be very tasty and soft. Thank you very much.5 stars

  7. Can I grind the vada batter and keep in fridge for 2 days? And then take out, form into balls and fry…

    1. you can do so. just let the mixture come to a room temperature and then fry. but what i have noticed with mixtures or chana dal or besan batters kept in the fridge, is that the taste changes after 1 or 2 days. so here too the taste will change.

  8. it is very similar to my moms procedure, if my mom makes vada’s everyone in the surroundings will be interested to eat.

  9. Love your recipes. This one turned into a disaster for me, however! I followed it exactly. When I put the vada in the oil to fry, they just started to fall apart. I then again tried after adding some rice flour. Same result. What am I doing wrong? I added only 2 tablespoons of water after grinding because I could not make the vadas. Other than that, followed the recipe exactly. Thanks!!

    1. too much of water in the mixture. 2 tbsp is fine when grinding. but i think 2 tbsp of water after grinding, has made the mixture thin. also the chana dal should be drained very well and added to the grinder. even a little bit of water when adding chana dal to the grinder, makes a difference. if you would have added more rice flour, the vadas would not have broken while frying. also the oil has to be hot. in oil which is not hot, the vadas can break while frying. hope this helps.

  10. Hey.. I have grind the dal in hand blender and did not add water but it’s very dry. Its very difficult to shape it or even fry it. It’s very very dry. What should I do. Pl help.

  14. Thanks a lot for us recepie.
Its Ramzan time and everyday need to prepare something chatpata, spicy and new snacks recepies for iftyari.
This recepie was really tasty we enjoyed it with tomato ketchup and imli chatni.
I made a few alterations in it
Instead of just black pepper I added 1pinch of garam masala and instead of only ginger I used ginger-garlic paste which was ready at home.

But overall the vadas was really very tasty.4 stars

  15. I made this
but made few alteration in the second step , I added few pods of garlic with skin.
i soaked the dhall for only 1 1/2 hour. Then I used food processor to grind the dhall.
if u want to make this quick soak the dhall in boiling hot water foe half an hour the vadas will be crispy only draw back in this is it sucks up oil .
    vada swill be very crispier

  21. Hi Dassana

Do you think it’s possible to make a non fried version of this vada in the aebleskiver pan?

I really love these vadas but want a quicker healthier option. Let me know if you think it’s worth a try! 🙂

  22. Delicious snack!! I made them for the first and they came out very nice n crisp.. Thanks fr sharing!!! Do u have a recipe fr cheese balls also?

    1. thats good to know ruchi. thanks 🙂 i did try making cheese balls and though they tasted damn good, but half of them burst in the oil while frying. cheese balls need to be fried at a certain temperature and the mixture should have a certain binding consistency. i am still trying and testing the recipe and will add if the recipe comes out very well.

  23. Hi Dassana
Mouthwatering snack! Thanks for providing this recipe. I love the smell of masala vadi more than the taste. I am wondering if it would work if I use soaked whole chic peas (chana) instead of the split chana.
