Bottle gourd soup recipe with step by step photos. Here comes a creamy and yummy bottle gourd soup. courtesy my spanish friend S. So this one’s a spanish recipe for making gourd soup.

Usually in spain they make this soup with zucchini/courgettes. but my friend one day made this soup with bottle gourd and the result was an amazing, thick, rich, creamy and nutritious bottle gourd soup. she shared this lauki soup recipe with me and I made the soup recipe a couple of times. I want to share this as most of us do not like bottle gourd and that includes me too. This recipe will change that for folks who do not like bottle gourd as it has done for me.

I love bottle gourd in this form. its also excellent for children and old people as bottle gourd has a lot of health benefits. Bottle gourd is also known as lauki, ghiya, dudhi in India.

The bottle gourd soup can be served with bread, rice or as a starter. You could even have it as a brunch or a light night meal. Also you could make the same recipe with zucchini/courgettes.

(1 CUP = 250 ML)

INGREDIENTS

  • 1 long bottle gourd (lauki or ghia or dudhi)
  • 2 onions or 4-5 scallions
  • 4 to 5 garlic (lahsun)
  • 2 teaspoon mixed herbs
  • ½ teaspoon black pepper powder
  • 3 to 4 tablespoon cream cheese
  • 3 tablespoon olive oil
  • salt to taste

INSTRUCTIONS

  • Rinse the bottle gourd in enough water and peel it. Chop the bottle gourd and put it in a pan.
  • Chop the onions and garlic and also add it to the same pan.
  • Add enough water just about covering the chopped gourd, onions and garlic.
  • Cover the pan and steam the veggies for 15-20 mins.
  • Now let the veggies and stock cool.

  • in a blender or food processor blend the veggies. But keep the stock aside.
  • In another pan now heat the olive oil. Add the pureed bottle gourd, onion, garlic.
  • Flavor it with the dry herbs and black pepper and salt.
  • Add the stock to get the consistency you want and simmer for 5-6 mins.
  • Before you switch off the fire add the cream cheese. Instead of cream cheese you could add some cream and also some cheese.
  • Give the bottle gourd soup a swirl and serve the soup hot with bread.

Lets begin bottle gourd soup or lauki soup recipe

1. Rinse the bottle gourd or lauki in enough water and peel it…. And what do you do with the peels…. You could make a fab coconut chutney with the peels and there you have a bottle gourd peels chutney. Chop the bottle gourd and put it in a pan.

2. Now chop the onions and garlic and also add these to the same pan….

3. Add water to the veggies.

4. Just enough water covering the chopped gourd, onions and garlic.

5. Put it on fire, cover the pan and steam the bottle gourd for 15-20 mins till they become soft.

6. In spain they don’t do it like I have done. They first saute the onions, garlic in olive oil. Then add the bottle gourd and then add the water and let the veggies cook. I was too lazy this day, so I put everything in one pan for the veggies to cook. After 15-20 mins you see your bottle gourd will soften and look great like in the pic below.

7. Now let the veggies and stock cool. In a blender or food processor blend the veggies. But keep the stock aside.

8. In another pan now heat the olive oil. Add the pureed bottle gourd, onions and garlic.

9. Flavor it with the dry herbs and black pepper. Also add salt.

10. Add the stock to get the consistency you want and simmer for 5-6 mins. Before you switch off the fire add the cream cheese. In spain they add some cream and some cheese instead of cream cheese.

11. Give the bottle gourd soup a swirl and Serve the Bottle gourd soup hot with bread. You could also serve it with bread croutons.

    I made it with ghee tadka,sauted cumin powder and a hint of lemon in it..4 stars

  2. Bottle gourd works very well in soup form .This was very easy to make and with only a few ingredients and mixed herbs it was very yummy.Added some milk instead of cream cheese. Loved it.5 stars

    • yes you can add milk and skip cream and cheese. but add milk towards the end. mix and then switch off flame.

  7. Thanks for this amazing recipe!! I have tried to like lauki in several forms, but nothing ever helped.. but I must say I just love it in this form!

    I added oregano, basil, thyme (dry herbs) and I added cream and cheese instead of cream cheese.. I plan to use thickened version of this soup as white sauce for pasta… 🙂5 stars

  13. Can u also suggest soups of red pumpkin, spinach, french beans etc . Inshort everything tht grows above the ground. Am not supposed to eat veggies tht grow under ground

  15. Hey!! After blending is it ok to strain the puree?? If it is not strained some pieces of the bottle gourd settle at the bottom soup?

    • if you blend thoroughly, then you won’t get any pieces of bottle gourd. if not blended well, then you will get small pieces.

    • the stock is the broth or water in which the lauki, onions etc have been cooked. while blending, you don’t need to add stock or water as the boiled lauki blends easily in the mixer/blender.

    i have oregano with me…can u guide me what else cud be in the list of dry herb that can be added to most of the soups and dishes……..

    • i shall look out for this particular recipe. i know of the bottle gourd yakhni since i have already made it before. but never heard of a dry soup… both the words dry and soup are a perfect contrast with each other.

  25. Tried this recipe and it turned out to be delicious! Few alterations: I used just 1 tbsp olive oil, didnt add cream cheese.. put few drops of lemon juice instead! Tasted good!

    • thanks indu. 1 tsp of olive oil is also alright and adding cream cheese can also be optional. lemon substitutes well in this soup also. nowadays i make this soup without adding cream cheese.

    • good to know that, deepti. may be i should also try out with indian spices. i am sure the soup will taste good with indian spices.

      and do try it with other herb mixes also like herbes de provence or italian herb mix. even adding dry rosemary or basil makes the soup really flavorful and yummy.

    This is a wonderful and healthy soup recipe. I would surely try this one. I don’t have any idea about dry herbs. Could you please tell me a substitute for this.

    • as a substitute to dry herbs, you could add fresh herbs like rosemary, thyme, basil, oregano, parsley, coriander, celery etc.

      try the fusion of different herbs or you could even try it with one type of herb.

      bottle gourd is bland and if you make the soup without adding any herb, then the soup will taste bland even though the recipe has onions and garlic. this is coz the proportion of onions and garlic used in the recipe is less as compared to the proportion of bottle gourd.

      when you add fresh herbs, just before you close the fire, add them. they need to be a cooked for a minute or so.
