before i start with the recipe, let me tell you this is not an eggless recipe. if you do include eggs in your diet then this recipe is for you.
i do not have eggs but the hubby does. i often make egg curries, egg masala, omlettes for the hubby and sometimes a baked dish like this bread and butter pudding.
this bread and butter pudding recipe is from my home science notes. it is way different than the other bread and butter pudding recipes. this is easy and simple to make and does not take much of your time. kids will like it too.
before proceeding to the recipe, let me write about the first giveaway on my blog.

for now lets begin with the step by step process of making the bread butter pudding at home.
1: heat milk and sugar in a saucepan.
2: just heat so that all the sugar dissolves. since i used demerara sugar the milk had a nice light brown color. when all the sugar dissolves remove from fire.
3: add the bread slices to the hot milk.
4: add butter.
5: mash the bread slices in the milk with the help of a wooden spoon or fork. the butter will melt naturally in the hot milk. let this mixture cool.
6: once the mixture is cooled, add the beaten eggs, vanilla powder, grated nutmeg and chopped cashews to the mashed bread mixture.
7: mix the whole pudding mixture well.
8: pour in ramekins or a greased baking tin or individual serving baking cups and bake at 150 degree C for 30-35 minutes till an inserted toothpick comes out clean.
9: serve hot, warm or cold.
ingredients
- 5-6 slices of brown or white bread
- 2 cups milk
- 2 eggs, whipped
- 1/2 tsp vanilla powder or 1 tsp vanilla extract
- 40 gms butter
- a pinch of grated nutmeg
- 4-5 cashew nuts, chopped
- 8-9 tbsp demerara sugar or plain sugar... add more for extra sweetness if you prefer
method:
- heat the milk and sugar in a saucepan.
- when sugar dissolves remove from fire.
- add the bread slices and butter to the hot milk.
- mash the bread with a fork or wooden spoon.
- allow to cool.
- when the mixture is cooled, add the whipped eggs.
- also add the chopped cashew, vanilla powder, grated nutmeg.
- pour into individual ramekins and bake at 150 degrees C for 30-35 minutes or till a toothpick inserted comes out clean.
- serve warm or cold.

i love this pudding recipe… it just seems nice and simple…your pictures just make the job more easy…must make it for my baby …is there any other way to make it if you dont have an oven or micorwave?
let me think….i think you can try steaming the pudding. cover the pudding with an aluminium foil and steam it in pan, like the way we do if for idlis or dhoklas. the pudding won’t get browned but it will be cooked. the texture will also be slightly moist and creamy. do give it a try.

now coming to vegetarianism..i have a small story..i became veg at the age of 16..when my grandmother was in her autumn days ,she used to tell me her childhood stories..how she once saw a butcher slaughtering a lamb and after seeing it she cried and cried for the whole day..then she left non-veg..she always expected me to leave it too..then one sad day she left me and after her demise i decided i will remain veg for the rest of my life..
also recently in a magazine i read about the thoughts animals create while getting slaughtered..they r in pain, fear..and when we eat it all the negative emotions create emotional as well as physical hazards in our body..
thats a huge compliment to me knowing that your read my posts before cooking and it is making a difference in your life. let me tell you your compliment has also encouraged me a lot. it has also added more weight to my knowingness that we have to increase awareness about vegetarianism and animal rights. we have to educate people and spread the message of vegetarianism as far as possible.
I am a vegetarian by birth and I am happy even now for my choice to be vegetarian.Somehow I can not digest the thought of killing an animal to fill our lil stomachs.I feel silly about the debate in b/n vegetarians n non-vegetarians that the vegetarians also kill the plants which have lives.In short,Neither I am killer who wants to kill those innocent animals nor my stomach is not a grave yard to accommodate the dead animal.This is my opinion truly and if I hurt others I am very sorry for it.

thanks pratibha. even i used to have these debates with my office colleagues over killing plants versus killing animals. there are many angles to this. one point is plants are not so consciously evolved as animals. second point is one should never go against the law of nature for eg: if a lion kills a deer and a deer feeds on the grass it is a natural cycle and there is nothing wrong in it and thats how nature works.
but the body of human beings as designed by nature is herbivorous. eating animal flesh just for tongue taste is going against the law of nature and breaking nature’s cycle. it is as good as saying that a deer is eating a rabbit.
third point – when we are killing an animal it releases lot of toxins and there are emotions of fear, helplessness etc and that becomes part of your system when you eat the flesh of the animal. so you become what you eat. so if you eat more non vegetarian food, you become more violent, greedy etc.

you can make the recipe without eggs. if you want you can completely omit the eggs. if you want a smooth & some creamy texture than you could add the following:
2 tbsp of cornflour dissolved with little milk
2 tbsp of arrowroot powder or
2 tbsp custard powder dissolved in some milk
Hi, I don’t have a oven but I do have a microwave. Can the bread pudding be done it and how
dear mani. you can cook the bread and butter pudding in the microwave. add 1 or 2 tbsp more milk so that the whole mixture is a little liquidy. microwave uncovered on medium power for 4-5 minutes or till the pudding is set. let the pudding stand for 5 minutes. then serve warm or cold.
Hi, Thanks for your prompt action. Ok I read your article on how to preserve curry leaves. I have a few trees and I get seeds in the month of May/June which I give out to whoever is willing to grow these trees. I believe you stay in Goa. I have one of my trees there too. I am from Mumbai and anyone interested in these seeds … do ask them to contact me. But only at the end of May/June. Oh of course yours have small leaves because you probably are growing it in a pot. These definitely need to be grown in the ground. Also don’t forget to put all your kitchen waste around this tree … it will flourish.

i do add the cooked veggie waters and sometimes some tea leaves waste in my curry leaves and rose plants.

None of my friend circle is vegan , but once i started to get more involved in rescuing dogs from death row in the US and helping spread the word about adopting indian street dogs in India, I found myself also reading about how we discriminate between different species of animals. I mean how can you do so much to save dogs, and keep eating chicken, pig and other animals while doing so. And we went vegetarian at first.
What I also found that dairy/milk industry is second largest cause of death and suffering right after the meat industry. 8 million calves alone slaughtered each Year in India. That is the amount of Surplus life we have to create to meet our dairy demand.
And the rest more millions who do get absorbed back into the dairy and meat industry never see their mother after their first few days of life. Meat causes direct killing , while dairy causes an indirect death which we dont see. And to top it all dairy is also another leading cause for a lot of diseases ranging from allergies to life threatening cancers. Whichever way we looked at the problem, we found only one solution.

thanks richa. i agree with what you mention on people loving their pets or saving dogs and at the same time eating other animals. i just could not relate with the duality in these people.
i know about the diary industry in india. but what i fail to understand is why they kill the calves. i remember so much distinctly as child when my parents would take me to get milk from the milk man fellow, the calves were there. they were not killed. they were fed. i discussed this with my husband and he said that the main reason for all this happening is population explosion. the little milk which the calves would get is also being taken away from them. i feel so bad.
i was vegan for a year… but found it too difficult to get vegan products here, except for soy milk and tofu. the tofu i get here is horrible. so i don’t buy it. and indian brand of soy milk is something i do not like. so i do not have any option but to make the vegan products at home. i still have to try my hands at making vegan milk or butter at home. what intrigues me is making vegan curd. i am still having milk curd. but i am looking for ways to incorporate vegan food in our diet… so the next time mother in law comes and she tells me drink milk… i will say i don’t drink cow’s milk…. i drink almond milk

The calves slaughter has been going on for ages now. Only some few rural small dairyies probably have no kill policy. A lot of others just leave the calves out to starve to a slow death instead of slaughtering them. You can imagine our demand by the fact that the 8 million are the Surplus produced, That means we cannot let them live to get absorbed in any industry- dairy, meat, bull work etc. and this has not happened in just a few years. thats 900+ calves killed every hour, 15 every minute!
I did a post on my personal blog about the goshalas in rishikesh where the cows are supposedly worshipped. a photographer did a picture story about it and you can see the calf tied away from the mother dying of starvation. Its just so heartrending if I think of a similar fate for my own baby who wants food every 2 hours.
this is so inhuman. i wonder if people like our parents, friends etc know about this. i am really going to stop having milk now. i have a few pending posts on yogurt based dishes. and these are going to be my last yogurt based posts.

I and my family were lactovegetarian for religious purpose. We used to check all the ingredients before we buy or eat something. Then, we found out there are some products in which some ingredients are not 100% vegetarian means they still use eggs or animal byproducts but they have different name. So, we couldn’t recognize them. I know some strict vegans don’t eat any milk products, honey, sugar, vinegar like animal by products. As being lactovegetarian, I and my family do not eat those products in which they have to kill or harm any animal to get that ingredient. Me and my friends started surfing around which ingredients do not contain eggs, gelatin, or any other animal products for which they have to kill or harm animal. We started to call many restaurants before going there and inquired about their ingredients to make sure they don’t use any ingredients from animal which are hidden. I started to look for some vegan and vegetarian websites. One day, I found your blogs and I was very impressed with all recipes posted by you. I started to follow your direction for recipes and my family enjoyed them a lot. I don’t have to depend on readymade products now for many recipes because I found many of them on your blogs.
Love all your recipes! Just incase, if you have used eggs or any ingredients, I tried to substitute with the different ingredient and they turned out awesome. Keep posting. Love all your suggestions! Happy cooking!

thanks hemina. i generally avoid using readymade products. having food science as one of my subjects, i do know animal products like gelatin etc added to foods like jellies, candies etc.
but things have become very worse now. god knows what the food companies add. i read so many horror stories every other day.

hi,ur recipes are so simple to follow and ingredients are so easily found in kitchen. i also do believe that just for a half a second taste buds we cant kill a animal or a sweet innocent looking live fishes and make our stomach a graveyard.
Though mu husband is a hardcore carnivorous (thats what i call non-vegetarians) your recipes are helping me in taste the vegetarian food.

Congrats on your 3 year annniversary Dassana! This B & B pudding sounds like pure comfort food, I love the fact that the bread is mushed up too!
I became vegetarian at the age of 13 because (wait for it) I saw an episode of an American TV programme called MASH where they had a pet lamb. At the end of the programme they had to kill the pet lamb to eat it!! That was it for me I could never eat meat again, the thought of killing and eating a living, breathing beautiul animal was just abhorrent, and it still is!
My food choices now that I am older are more about health issues, 2 years ago aged 36 I was diagnosed with breast cancer, I attribute my swift recovery to a combination of conventional and alternative medicine and a complete change in my diet. I avoided all cow’s milk products altogether as well as all sugars (including fruit) which was very difficult! My diet post treatment is less strict but I still try to keep my intake of animal based products to below 10% of my diet and eat a mainly whole food plant based diet whenever possible. I feel better than ever and am passionate about telling other people about the importance of diet and health. I’ll stop ranting now sorry!!

its nice to know that the food choices you made have helped you. i too started turning towards vegetarianism at the age of 14. it was a rebellion in my family. glad i persisted. has helped me so much in terms of health, cleansing the body as well as in my meditation.

thanks archana. there are tons of vegetarian recipes out there. in fact the indian cuisine is rich in vegetarian food and most of them are also naturally vegan recipes.
I adore being lacto vegetarian and sometimes vegan because the food is so awesome. I love cooking and creating new exciting recipes. It means loads of health benefits and infinite compassion for myself and of course the animals. This principle of kindness is a lifestyle choice.Of course this way of living gives one an inner glow, so one’s skin glows and makes one more youthful and beautiful inside and out!!!I dare more foodies out there to give it a go!!!
