One of the most loved berries of the world, the strawberry is technically not a berry or fruit. It is termed as a ‘false fruit’ or ‘pseudocarp’ by botanists.

According to food historians, this member of the rose family was an important part of our ancestors’ lives and was consumed because of its medicinal properties. According to ancient Romans, strawberries could be used to cure kidney stones, depression and sadness.

Not just for ancestors, even the modern age considers strawberries as an amazing source of Vitamin C, antioxidants, fiber and other minerals. It works excellently in reducing bad cholesterol levels in human beings.

Origin: The very popular Strawberry Ice Cream of today is believed to have born in 1813 in United States, where it was invented by First Lady Dolley Madison.

Owing to its many benefits, US celebrates the National Strawberry Ice Cream Day as a holiday.

About Strawberry Ice Cream

As already mentioned earlier in this post, this Strawberry Ice Cream does not need an ice cream maker to prepare. Thus, is a quick, no-cook recipe. Also, try scoops of this ice cream with this homemade version of Chocolate Ice Cream. It’s just as gorgeous!

Completely a no-frills ice cream, the ingredients used in this Strawberry Ice Cream recipe are fresh strawberries, whole fat milk, cream and sugar. What can easier than this, right? However, because of this, you may not get a texture similar to that of a Strawberry Ice Cream available in the market.

This ice cream only needs to be whipped once more after it’s almost set. So, absolutely great for children who want to try their hand in preparing something really delicious. Just be there to supervise and encourage them to make this recipe from scratch.

A simple, no-nonsense Strawberry Ice Cream, this recipe will yield you a very homely dessert that you can enjoy with your friends and family. Serve it as it is or topped with fresh strawberries, chocolate sauce or colorful edible sprinklers.

Step-by-Step Guide

How to make Strawberry Ice Cream

1. In a blender jar, add 1 cup of cold whole milk, ¾ cup cold whipping cream (25% to 35% fat), 8 tablespoons sugar or as needed and 1 cup chopped fresh strawberries.

Make sure to rinse the strawberries first in water a few times. Pat dry them thoroughly and then chop them.

2. Blend everything to a smooth and fine mixture.

3. Pour the ice cream mixture in a container. Cover tightly and keep in the freezer for the ice cream to set for 4 to 5 hours or as needed.

4. When the ice cream is almost set, wait for some minutes. Then remove the ice cream with an ice cream scoop or break into parts with a knife. Add these to a blender jar. You can see the ice crystals in the picture and we need to get rid of these.

5. Blend till the mixture is smooth and slightly doubled up. You can see the texture of the strawberry ice cream below. Pour back in the same container, cover with lid and keep in the freezer for the ice cream to set.

6. When fully set, scoop and serve Strawberry Ice Cream as it is, with fresh strawberries or topped with your favorite garnishes.

Expert Tips

  1. Use only fresh quality strawberries. Hull and wash them well. Pat dry, chop and then use for this recipe. If you can’t source fresh strawberries, use frozen strawberries.
  2. We don’t usually get sweet strawberries in India. So, I have added 8 tablespoons sugar in this recipe. You can alter this quantity depending on the sweetness of the strawberries.
  3. To get a good texture, whip well in the second whipping round when the mixture will also double up in volume.

FAQs

What can I use as an alternative to cream and sugar in this recipe?

There is no substitute for cream in the recipe. Instead of sugar, you can add your preferred sweeteners – maple syrup, palm sugar, coconut sugar and jaggery are some options.

Can I use full fat cream milk in place of whole milk?

Yes, you can use full fat cream milk.

How do I get a better textured ice cream?

Make sure to whip the ice cream mixture well in the second whipping round and it should slightly double up in volume. You will get a good texture like this.

Can I use hand blender for whipping after the ice cream has partially set and then re-freeze?

Yes, you can do that but it will be tricky to whip it.

Is it ok to use semi-skimmed milk to make this ice cream?

You can use semi-skimmed milk. In this case, the taste and texture may differ.

Ingredients

  • 1 cup whole milk
  • ¾ cup whipping cream – 25% to 35% fat
  • 1 cup chopped strawberries
  • 8 tablespoon raw sugar or white sugar (adjust depending on the sweetness of the strawberries)

Instructions
 

  • Rinse strawberries a few times in water using a colander or strainer. Drain all the water and transfer strawberries onto a tray or plate.
  • Pat dry the rinsed strawberries thoroughly. The strawberries should be dry before you chop them.
  • Roughly chop the strawberries and set aside.
  • In a blender add cold milk, chilled cream, sugar and chopped strawberries.
  • Blend to a smooth and fine consistency. Make sure there are no chunks of strawberries in the mixture.
  • Pour this mixture into a ice cream box or container.
  • Cover tightly and keep in the freezer for 4 to 5 hours or more for the ice cream to set.
  • When the ice cream is almost set, remove and let it sit at room temperature for some minutes till you can slice it with a knife easily or scoop it with an ice cream scooper.
  • Add the ice cream pieces or scoops in a blender again and whip till the mixture is smooth, creamy and slightly doubled up in volume.
  • Pour back in the same container or box. Cover tightly and keep in the freezer to set.
  • When completely set, scoop and serve Strawberry Ice Cream as it is or with fresh strawberry pieces or topped with your favorite garnishes.

Notes

  • Both fresh as well as frozen strawberries work in the recipe. 
  • Ensure that the milk and cream is cold before you blend them with the strawberries.
  • The sugar can be adjusted keeping in the mind the sweetness of the strawberries. 
  • Remember to whip the ice cream second time very well. 
  • The recipe can be halved or doubled.

  5. Mam can we substitute strawberries with pineapple in case we want to make pineapple ice cream, or maybe I could substitute mango with pineapple in mango ice cream recipe that you posted.please let me know ….I just love pineapple ice cream. .4 stars

    1. with pineapple, one has to take care as the enzyme bromelain in pineapple can react with the milk and make it taste bitter. this has happened with me once. so i am careful with pineapple. what i would suggest is that cook the pineapple in some sugar. let them soften and then make a puree. let the cooked pineapple pieces cool down completely and then make a puree. make the puree first and then add milk, cream etc and then blend. you can follow either the mango ice cream or this strawberry ice cream recipe.

    I want to make ice cream in ice cream maker and most of the recipe available online need to put egg while making ice cream… Why is it used..?? and is there any good vegetarian substitute available..?

    1. egg gives the ice cream light and soft texture. thats why they are added in most of them. you can add whipped cream, condensed milk, custard powder or corn starch as an egg substitute. fruit purees or pulps like banana puree, mango puree and applesauce also give good results.

    1. bhawana, its got over cooked. just add some water and keep it on stove top and heat a bit… it will become thin.

  13. Hey dear.. Tried this n it CME out perfrctly awesome…. So next tym I tried wit litchi flavour as my husband loves it… BT second tym whippkn don’t turn up into cremy texture… Can I know y it could be.. I have used condensed milk instead of cream both the times.. Pls help… Thnke u

    1. i think its due to the litchis. so depending on the quality of fruits, the result will change. this recipe will go very well with fruits like bananas and mangoes.

    1. hi bhumika. in the second whipping round, if the icecream mixture is whipped well, then you should get a good texture. it should slightly double up in volume. thanks bhumika. i am not a master, just that i have some cooking experience. its all about learning. i still have bad days when things just go wrong with some recipes.

        1. yes you can use both of them. the taste will be different and the texture will be more smooth. reduce the sugar if using sweetened condensed milk.

  20. With so much chocolate related recipes doing rounds, and having indulged in more than my fair share of chocolates for the V’day, I could really use this to satisfy my sweet-tooth.
    I have a lazier version of this ice-cream though. I just chop my berries and freeze them. Once frozen I just run them through a food processor with some whipping cream, sugar and vanilla. 🙂
