Drumstick sabji recipe with step by step photos – this drumstick bhaji or sabji is a steamed and dry preparation of drumsticks with spices and coconut. This dish is also called as shevga bhaji. A vegan dish.
Drumsticks are the pods of the plant Moringa oleifera. These are also called as saijan ki phalli in hindi & shevga in marathi.
This recipe of drumstick sabji is one of those side dishes, that I prepare to be served with dal-rice and sambar-rice combination. The recipe does not contain onion and garlic. But onions can be added to the recipe.
This is a healthy sabzi and drumsticks are a good source of calcium, iron and vitamin c. Both drumstick pods and drumstick leaves have many health benefits.
Always use tender drumsticks for cooking. You can serve shevga bhaji as a side dish with chapatis or dal-rice, sambar-rice, rasam-rice.
How to make drumstick sabji
1. Rinse, peel and chop the drumsticks into 4 to 5 inches pieces long. Keep aside.
2. Heat 1 to 1.5 tablespoons oil in a pan. Add ½ teaspoon mustard seeds and let them crackle.
3. When they start crackling, add ½ teaspoon cumin seeds.
4. Saute till the cumin seeds also crackle.
5. Then add 7 to 8 curry leaves, a pinch of asafoetida, 1 green chili (chopped) and 1 to 2 dry red chilies. Stir and mix.
6. Add salt as per taste. Mix again.
7. Then add the chopped drumsticks.
8. Sprinkle ¼ teaspoon turmeric powder.
9. Mix very well.
10. Add ¼ cup water. Mix again.
Cooking drumstick sabji
11. Cover the pan with a rimmed lid. Add some water on the lid. Cook the drumstick sabji on a low flame.
12. Do check after every 4 to 5 minutes. In case the water dries up in the pan and the drumsticks are not yet cooked, then sprinkle or add some water. Cover with the rimmed lid with water in it and continue to cook on a low flame.
13. Simmer till the drumsticks are tender. If there is any water left in the pan when the drumsticks are done, then cook without the lid till all the water evaporates.
14. Add ¼ cup grated fresh coconut.
15. Mix very well and switch off the flame.
16. Then add 1 to 2 tablespoon chopped coriander leaves. Mix again.
17. Serve drumstick sabji as a side dish with dal-rice or sambar-rice. You can also serve this drumstick sabzi with chapatis or rotis.

- 1 green chili - chopped
- 1 to 2 dry red chilies
- ¼ teaspoon turmeric powder
- ¼ cup water
- salt as required
- ¼ cup grated fresh coconut
- 1 to 2 tablespoons chopped coriander leaves (cilantro leaves)
Instructions

- Do check after every 4 to 5 minutes. In case the water dries up in the pan and the drumsticks are not yet cooked, then sprinkle or add some water. Cover with the rimmed lid with water in it and continue to cook on a low flame.

- Then add 1 to 2 tablespoon chopped coriander leaves. Mix again.

Hi Dassana! i normally prepare the drumstick subzi using oil, hing, mustard seeds,chopped garlic (optional),ginger- green chilli paste, turmeric powder,coriander powder,boiled drumstick,yogurt,gram flour,jaggery & salt.i’ve never tasted the dry drumstick subzi & I am definitely going to try your recipe soon.
