lauki wadi recipe – yet another comfort food for all of us at home is this lauki wadi. this is again one of those recipes which i cook often.

here bottle gourd also known as opo squash is simmered in spicy curry with punjabi wadis – sun dried lentil dumplings.

now everyone does not have access to sun dried lentil dumplings. still you can make the curry without the wadis.

posting the recipe as one of my dear reader requested for this one.

since ganesh chaturthi is over and i was pretty busy with many things, all i managed to post was some ganesh chaturthi festival recipes. i will be now working on the recipe requests one by one and also plan to post them one by one.

the whole lauki wadi recipe is made in a pressure cooker. but without a pressure cooker also you can make this dish. lauki wadi goes well with rotis and a side salad or raita.

we make it a little on the spicy side as lauki is pretty bland on its own. the wadis add a nice texture to the otherwise plain curry and are delicious to eat too.

ingredients (1 cup = 250 ml)
  • 2 to 2.5 cups chopped bottle gourd (lauki or opo squash)
  • 9-10 punjabi wadis
  • 1 medium size onion, finely chopped
  • 2 medium size tomatoes, finely chopped
  • 1 or 2 green chilies, chopped
  • ½ inch ginger, finely chopped or ground
  • 1 teaspoon cumin seeds (jeera)
  • ½ teaspoon turmeric powder (haldi)
  • ½ teaspoon red chili powder (lal mirch powder)
  • ½ teaspoon punjabi garam masala or regular garam masala
  • 2 tablespoon oil
  • 1 to 1.5 cups water
  • salt as required
  • some coriander leaves for garnishing (optional)
how to make recipe
  1. rinse, peel and chop the lauki (bottle gourd).
  2. heat oil in a pressure cooker. splutter the cumin.
  3. add onions and fry till transparent.
  4. add the ginger and green chilies and fry for a minute.
  5. now add the tomatoes and fry them till the oil starts to leave the masala.
  6. in the meantime rinse the wadis in water and keep aside.
  7. add the turmeric powder and red chili powder.
  8. stir and add the chopped lauki (bottle gourd).
  9. add water plus salt.
  10. stir and lastly add the wadis.
  11. pressure cook for 4-6 whistles till the lauki is cooked well and becomes mushy.
  12. if you find the curry to be more liquid than dry it a little simmering it in the cooker without the lid.
  13. finally add the punjabi garam masala powder and chopped coriander leaves.
  14. stir and serve lauki wadi hot with some phulkas or chapatis.
