One pot pasta recipe with step by step pics. Making veg pasta in one pan is an easy method and takes less time as compared to cooking pasta with the traditional method.
I discovered this one pot method a few years back and have been making pasta with this technique on occasions.
This recipe is not only vegetarian but also vegan. I have not used any cream in the pasta. Instead of cream I have used cashew powder.
Instead of cashew powder, you can also use ground roasted almonds powder or ground pistachios powder. You can also use cream if you want or add some cheese to the pasta.
The veggies can be of your choice. usually in pasta I add vegetables like carrots, peas, mushrooms, french beans, potatoes. But you can add vegetables which your family likes or prefers. Few more pasta recipes where you can add mix veggies to make the dish more healthy are:

For the pasta sauce, I have used tomato basil sauce. The sauce is made while cooking the pasta. So you do not need to use any readymade or store brought pasta sauce. This one pan pasta recipe can be halved or doubled.
Serve veg one pot pasta hot or warm. while serving veg pasta you can top it with some cashew powder. You can also top it up with a bit of cream or grated cheese.
How to make one pot pasta
1. Firstly rinse, peel and chop all the veggies. Chop onions, garlic and tomatoes finely. Also chop the carrots, capsicum, potatoes, french beans in small pieces or cubes so that they cook faster.
2. Heat 2 tablespoons olive oil. You can use butter or sunflower oil instead.
3. Keep the flame to a low and then add 1 teaspoon finely chopped garlic.
4. Stir and saute garlic for a few seconds.
5. Then add ⅓ cup chopped onions.
6. Stir and saute onions till they turn translucent.
7. Next add 3 medium tomatoes (275 grams) which have been finely chopped. You can also mince or puree the tomatoes for a smooth pasta sauce.
8. Mix very well and begin to saute tomatoes on a low to medium-low flame. Stir often when cooking tomatoes.
9. The tomatoes should turn pulpy and soften. You should also see some oil releasing from the sides.
10. Then add ½ to ⅔ teaspoon crushed black pepper and mix.
11. Now add the chopped veggies – ½ cup chopped bell pepper (capsicum), ⅓ cup french beans, ½ cup chopped carrots, ⅓ cup chopped potatoes and ¼ to ⅓ cup frozen green peas.
12. Mix well and saute veggies for a minute.
13. Add salt as per taste.
14. Add 2.5 cups of water. If you want a slightly soupy and saucy pasta, then add 3 cups water.
15. Mix well and cover the pan with a lid.
16. Cook the veggies on a medium flame for 7 to 8 minutes or till the entire mixture comes to a boil.
17. Then add 1 cup pasta (100 to 105 grams). You can rinse the pasta before adding it. I have used here macaroni pasta. You can use any type of pasta. By the time the pasta is cooked the veggies will also cook.
18. Mix again and cover the pan with lid. Simmer on medium flame till the pasta is cooked. by the time the pasta is cooked the veggies will also cook.
19. Meanwhile, in a mortar-pestle or in a small grinder take 15 to 20 cashews.
20. Crush or grind to a fine powder. Keep aside.
21. In between do check when the pasta is cooking.
22. Give a stir and continue to cover and cook. If the pasta starts sticking to the bottom of the pan, then add some water.
23. Simmer till the pasta is softened and cooked well. If there is any water left then continue to cook without lid till most of the water evaporates.
24. Then add the cashew powder. Reserve ½ to 1 tablespoon cashew powder for garnish (optional).
25. Add ½ teaspoon dried oregano, 2 to 3 basil leaves (chopped). You can also add Italian seasoning or your choice of fresh or dried herbs. mix well. Check the taste and add more herbs, salt and pepper if required. At this step, you can also add some cream in the veg pasta.
26. Serve one pot pasta topped with some cashew powder. You can also top it up with a bit of cream or grated cheese.

Ingredients

- 3 to 4 small to medium garlic cloves, finely chopped or 1 teaspoon finely chopped garlic
- 60 grams onion, finely chopped or ⅓ cup chopped onions or 1 medium onion, chopped
- 275 grams tomato, finely chopped or 3 medium to large tomatoes
- ¼ teaspoon black pepper, crushed or ½ to ⅔ teaspoon crushed black pepper
- 85 gram bell pepper, chopped or 1 medium to large bell pepper or ½ cup bell pepper (capsicum)
- 50 grams french beans, chopped or or 10 to 12 french beans or ⅓ cup french beans
- 90 grams carrot, chopped or 1 medium carrot or ½ cup chopped carrots
- 60 gram potato, chopped or 1 small to medium potato or cup chopped potaotes
- ¼ to ⅓ cup frozen green peas
- 100 to 105 grams macaroni pasta or 1 cup pasta
- 2.5 cups water - for more sauce you can add 3 cups water
- salt, as required
- ½ teaspoon oregano or add as required
- 2 to 3 basil leaves, chopped or 1 to 2 teaspoons chopped basil leaves
- 15 to 20 cashews - powdered
