Ingredients

medium orange
- yields approximate ⅓ cup juice and 1 teaspoon zest

whole wheat flour

gram flour

organic unrefined cane sugar
or brown sugar or demerara sugar

Grate the orange peel to get the orange zest. Make sure to grate the orange part and not the white pith as its bitter.
Peel and chop orange. Remove the seeds. Blend the chopped orange in a mixer. You can even use an electric juicer to get the orange juice.
Strain the orange juice and collect it in a small bowl or measuring cup.

In a bowl or pan, add the orange juice, sugar and olive oil. Whisk till the sugar dissolves & and everything has mixed well.
Sieve the whole wheat flour, salt, corn starch, baking powder and baking soda all together directly in the bowl.
Add the orange zest. Stir lightly and then add the gram flour.
Mix everything with your hands and knead to a soft dough. Divide the dough into 12 to 14 small shaped balls.

Flatten the balls and arrange them on a greased baking tray with enough space between them.
Bake in a preheated oven for 200 degrees celsius/392 degrees fahrenheit for 20 to 25 minutes.
Temperatures vary from oven to oven, so the time will also vary.
For baking in a microwave oven at convection mode, bake at 180 degree celsius for the same period of time.
When the cookies are done, cool them on a wire rack.
When they cool down, then using a small sieve, sprinkle icing sugar or castor sugar on the cookies.
Serve these eggless orange crinkle cookies straightaway or you can store them in an air-tight container.
The recipe makes 12 to 14 cookies. These orange cookies stay good for a couple of days at room temperature.
