Pav Sandwich

pav sandwich is yet another scrumptious snack from the mumbai street food scene. in this recipe a spiced mashed potatoes stuffing is placed in the pav along with some sliced veggies.

Ingredients

for potato stuffing

  • 3 medium sized potatoes - boiled
  • ½ teaspoon pav bhaji masala
  • ½ teaspoon chaat masala or sandwich masala or add as required
  • ½ teaspoon roasted cumin powder
  • ¼ teaspoon kashmiri red chilli powder
  • salt as required

other ingredients for pav sandwich

  • 4 pav or bread rolls
  • 1 small onion - thinly sliced
  • 1 small tomato - thinly sliced
  • 1 small cucumber - thinly sliced
  • sandwich chutney or green chutney - as required
  • butter as required, you can also use oil

Instructions

making potato stuffing

  • first rinse and then take 3 medium potatoes in a 2 litre pressure cooker. also add ½ teaspoon salt. add enough water just about covering the potatoes. 
  • pressure cook for 4 to 5 whistles on medium flame or till the potatoes are softened and of a mashable consistency.
  • when the potatoes become warm, peel them and mash well with a fork or with a potato masher.
  • now add the following spice powders – ½ teaspoon pav bhaji masala, ½ teaspoon chaat masala, ½ teaspoon roasted cumin powder, ¼ teaspoon kashmiri red chilli powder and salt as required.
  • mix very well.

assembling and making pav sandwich

  • keep all the ingredients ready for making pav sandwich.
  • slice the pav in two halves.
  • heat 1 to 2 teaspoons butter in a tawa or pan. let the butter melt.
  • place the pav slices and roll them on the melted butter.
  • then turn them and roll on the remaining leftover melted butter.
  • toast 4 to 6 pav slices at a time depending on the size of the tawa or pan.
  • toast one side till light golden or golden and crisp.
  • turn over and toast the second side till light golden or golden and crisp. remove the toasted pav.
  • spread some sandwich chutney on the pav.
  • take a portion of the spiced mashed potato mixture and place it on the pav. press and flatten the potato mixture.
  • now place two to three thin slices of onion, tomato and cucumber. sprinkle some chaat masala and black salt also.
  • cover with the remaining pav slices.
  • serve pav sandwich as soon as you assemble them with a side of sandwich chutney or coriander chutney or tomato ketchup.
