Dill Leaves Raita
A raita is a healthy accompaniment to any Indian meal. This dill leaves raita has the aroma and flavors of dill leaves in it.

Ingredients

Curd
(yogurt)
½
cup
finely chopped cucumber
¼
teaspoon
roasted cumin powder
¼
teaspoon
red chilli powder
salt as required
for light sauteing

teaspoon
oil
¼
teaspoon
cumin seeds
½
teaspoon
finely chopped ginger
¼
cup
chopped dill leaves
Instructions
In a bowl take 1 cup fresh curd and whisk it till smooth.
Then add ½ cup finely chopped cucumber.
Also add ¼ teaspoon roasted cumin powder, ¼ teaspoon red chilli powder and salt as per taste. mix well.
In a small pan, take 1 teaspoon oil. Add ¼ teaspoon cumin seeds and let them crackle.
Then add ½ teaspoon finely chopped ginger. Mix and saute for a few seconds till the raw aroma of ginger goes away.
Then add ¼ cup chopped dill leaves.
Mix very well.
Saute for 1 minute stirring often.
Add the sauteed dill leaves mixture to the bowl containing the curd+cucumber+spice powders.
Mix very well.
Serve dill leaves immediately or you can refrigerate for 20 to 30 minutes and then serve.
Notes
You can add spice powders less or more.
Cucumber can be skipped if you do not have it.
