2medium to large plantainsor 210 grams raw unripe bananas or 1.75 to 2 cups chopped plantains
45gramspearl onions,about 9 to 10 pearl onions or 1/3 cup thickly sliced pearl onions or chopped onion
1.5tablespooncoconut oil
1teaspoonmustard seeds
1chopped green chilli
1 or 2dry red chillies- broken and seeds removed
1sprig curry leavesor 8-10 curry leaves
¼teaspoonturmeric powder
½teaspoonred chilli powder
¼cupwateror add as required
salt as required
Instructions

Rinse 210 grams raw unripe bananas first. Peel them lightly.
Then chop them in small cubes. Add them in a bowl containing water, so that they don't darken. Keep aside.
making raw banana fry
Heat 1.5 tablespoon coconut oil in a shallow frying pan. Keep the flame to a low and add 1 tsp mustard seeds. Let the mustard seeds splutter.
Then add 1/3 cup thickly sliced shallots. Stir them well and saute for a minute.
Next add 1 chopped green chilli, 1 or 2 dry red chillies (broken & seeds removed) and 1 sprig curry leaves. Mix very well and saute for a minute.
Then add the chopped raw bananas. Mix the bananas with the rest of the ingredients.
Next add 1/4 teaspoon turmeric powder, 1/2 teaspoon red chilli powder and salt as required. Mix very well.
Add 1/4 cup water. Mix again very well.
Cover the pan and cook the bananas on a low flame or sim.
Do check a couple of times when the banana is cooking. If the water dries up and the banana is not cooked, then you can add some more water.
Once the bananas have softened, then cook them without a lid, till all the water or moisture evaporates.
Stir a couple of times when sauteing them. Then switch off the flame.
Serve raw banana fry hot or warm with sambar-rice, rasam-rice, dal-rice or chapatis. If you want you can also garnish with some coriander leaves while serving plantain fry.
Notes
You can add red chilli powder as per your taste requirements.
Either only red chili or green chili can be skipped.
You can use shallots or even regular onions in place of pearl onions.
Coconut oil brings out the best flavor in this dish.
