Veggie Burger Recipe
Make your own breadcrumbs or use store bought.
Steam 3 potatoes, 1 medium to large carrot, and beans. Place them in a bowl with peas until they are cooked.
Peel & roughly chop the potatoes when warm. Also peel the cooked carrots and finely chop them and the french beans.
Mash the potatoes with a masher.
Add the chopped carrots and beans. Also add the steamed peas. Mix together & set aside.
Finely chop 1 medium sized onion and crush 4 to 5 garlic cloves, ½ inch ginger and 1 or 2 green chilies (hot peppers) into a paste. Heat 1 tsp oil in a pan.
Add the chopped onions.
Stir and sauté until the onion is translucent.
Add ½ tsp coriander powder, ½ tsp cumin powder, ½ tsp garam masala powder, ½ tsp red chili powder or cayenne pepper and ¼ tsp turmeric powder.
Switch off heat and add chopped cilantro or parsley.
Stir very well & add the sautéed onion mixture to the mashed veggies.
Add salt to taste and 5-6 tablespoons of breadcrumbs.
Mix very well.
Make the size of the veggie patties the same as the size of the buns. If the mixture looks soft or crumbles, then add some more breadcrumbs & mix everything again very well.
Add 3 Tbsp vegan mayonnaise in a small mixing bowl. Add ½ tsp mustard seeds which have been crushed or powdered in a small spice grinder or mortar-pestle. Also add ½ tsp freshly crushed black pepper.
Next, add lemon juice, apple cider vinegar, and olive oil.
Season with ¼ to ½ tsp sugar. Add sugar as per taste. Add ⅛ tsp or 2 to 3 pinches of salt.
Whisk well and set aside. Adjust the flavors if needed.
Add 3 Tbsp maize flour, polenta or fine cornmeal, 3 Tbsp rice flour & 2 Tbsp gram flour (besan or chickpea flour). Add ½ cup water and stir.
Heat oil in pan. Dip patties into batter.
Coat the patty in breadcrumbs then fry in hot oil in a large pan.
Flip the patties when they are golden. Toast the buns with butter.
Spread the spiced mayo on the underside of the toasted bun. Add chopped lettuce.
Place the cooked patty on the bun and top with onions, tomatoes, and cucumbers.. Spread mayo on other half of bun and top the burger.
