Schezwan Fried Rice
Rinse the basmati rice until the water runs clear. Then soak the rice in water for 30 minutes. Drain and set aside.
Bring water to a boil then place a few drops of oil in the water.
Add the drained soaked rice.
Simmer on a low flame, until the rice grains are just cooked. Then, strain the rice in a colander. Rinse with water.
Chop all the french beans, carrots, cabbage finely. If adding button mushrooms, then slice or chop them. Carrots and cabbage can also be shredded.
Add the chopped garlic & sauté for about 15 to 20 seconds. You can use toasted sesame oil or any neutral tasting oil for stir frying.
Increase the heat and add all the vegetables to the oil.
Cook for about nine minutes, then add the Schezwan sauce.
Stir well.
Next, gently stir in the cooked rice.
Season with salt, pepper, and vinegar.
Mix and stir fry for 2-3 minutes.
Garnish with spring onions and serve warm.
