Rava Upma | Upma Recipe
In a pan, roast one cup of rava or cream of wheat. Once it is dry and crisp, switch off the flame & set aside.
In a pan, heat 2 Tbsps ghee or oil. Next, add the mustard seeds.
Next, add the ½ teaspoon cumin seeds along with 1 teaspoon chana dal (husked and split bengal gram) and 1 teaspoon urad dal (husked and split black gram)
Stir fry until the ingredients turn brown. Add 10-12 cashews & fry on medium-low heat.
Next, add the chopped onions to the browned cashews. Sauté until they become translucent on med-low heat.
Then, add the chopped green chillies, ginger, & curry leaves. You can also add 1 dried red chili.
Mix & sauté for a few seconds.
Add 2.5 cups of water to the mixture. Add salt as desired and optional sugar.
Bring the mixture to a rolling boil over medium to high heat.
When the liquid reaches a boil, switch the flame to low and add 4-5 batches of rava. Stir and mix immediately until dissolved.
Add the next batch of rava and stir until mixed evenly in the water.
Continue to stir and add the rava.
Quickly stir and mix well. The grains will absorb the liquid and swell.
Cover the rava and allow it to steam for 2-3 minutes on low heat.
Switch off the heat. This is what the upma should look like.
Lastly, if you would prefer, add chopped cilantro (coriander leaves) to the upma.
