Next, pressure cook the chana dal for 6 to 7 whistles. To know more, swipe up!
Heat ghee in a pan. Add dried ginger powder, nutmeg powder, cardamom powder, fennel powder. Fry on low heat for a few seconds.
Add cooked chana dal and jaggery powder. Cook this puran mixture on low heat till it becomes dry. Stir at intervals.
Meanwhile, take whole wheat flour, all-purpose flour and salt in a bowl.
Add a bit of water and ghee or oil and mix.
Begin to knead the dough, adding water as required. The dough should be smooth and soft. Cover and keep aside for 15 to 20 minutes.
Cook the puran mixture till thick and dry, as shown in the picture. Let it cool.
Now, mash the puran mixture very well with a potato masher. To know more, swipe up!
Take a medium or large size ball from the dough. Roll it 2 to 3 inches in circumference and place a portion of puran mixture in the center.
Bring the edges together towards the center.
Join all the edges and pinch them in the center.
Sprinkle some flour and start rolling the dough.
Make a medium or large disc. It should be rolled a bit thin, not thick.
Spread some ghee on a heated tawa or griddle.
Place the rolled disc (puran poli) on the tawa.
When one side is browned, flip and cook till the other side is browned too.
Once the second side is browned, flip and apply ghee. If everything is done properly, then the puran poli will puff up.
