Peas Pulao | Matar Pulao

Prepare the basmati rice: Rinse 1 heaping cup of basmati rice under cool water until the water runs clear. Then soak the rice for 20 to 30 mins, drain, & set aside

Heat oil in a pressure cooker. Add cinnamon, tej patta, cumin seeds, cloves, cardamom pod, strands of mace, and green cardamom pods. Fry until fragrant.

Add thinly sliced red onions to the pressure cooker.

Mix and sauté the onions until they are caramelized. Do not overcook.

Next, add fresh or frozen peas.

Mix well and sauté the peas for another minute.

Add the drained basmati rice, and gently stir. You don’t want to break the rice grains.

Sauté and stir until each grain is coated in oil.

Add 1¾ cups of water to the cooker.

Season with salt.

Cover and pressure cook for 2 whistles on medium to high heat, or for 6-7 minuites.

Let the rice sit before a manual pressure release.
