For the gravy, blanch onions and tomatoes in boiling water for 1 to 2 minutes. Switch off heat, cover and keep aside.
Later, chop the onions roughly and make a smooth paste, without adding water.
Similarly, peel, roughly chop the tomatoes and make a smooth puree.
Beat fresh curd till smooth. Keep aside.
Next, heat oil in a pan. Add the prepared onion paste.
Sauté till the onion paste turns golden. Stir often.
Add ginger-garlic paste and sauté till the raw aroma of ginger and garlic goes away.
Add tomato puree, stir and sauté till the oil leaves the sides of the masala.
Add turmeric powder, red chili powder, coriander powder and garam masala powder.
