Paneer Bhurji

Crumble the paneer (cottage cheese) with your fingers.

Heat oil, ghee or butter in a frying pan. Add cumin seeds and let them crackle.

Add finely chopped onions.

Sauté onions on medium low heat till they soften and turn translucent.

Add ginger-garlic paste and chopped green chilies.

Mix well and sauté till the raw aroma of ginger-garlic goes away.

Add tightly packed finely chopped tomatoes.

Mix and begin to sauté on medium-low heat.

Sauté till the tomatoes completely soften and oil leaves the sides of the pan.

Add turmeric powder, red chili powder, coriander powder and garam masala powder.

Mix and sauté for 5 to 6 seconds.

Add crumbled paneer and salt.

Mix thoroughly and cook for one minute.

Switch off the heat, add chopped coriander leaves and mix well.
