Take rice flour, gram flour and cornstarch in a bowl.
Add green chili paste, garlic paste, ginger paste, red chili powder, garam masala powder, lemon juice and salt.
Add water to the mixture.
Whisk the ingredients to a smooth, medium consistency batter. To know more, swipe up!
Add cottage cheese (paneer) cubes to the batter.
Gently mix the paneer cubes in the batter, cover and set aside to marinate for 15 to 20 minutes.
Shallow fry the paneer cubes in medium hot oil. To know more, swipe up!
Flip and fry the other side. Continue till the outsides turn crisp and golden.
Drain fried paneer cubes on a kitchen paper towel to remove excess oil.
Heat some more oil in the same pan. Add mustard seeds and let them crackle.
Add chopped ginger, chopped garlic, slit green chilies, dried red chilies and curry leaves, stir well.
Add chopped onions to the pan.
Stir and sauté till the onions turn translucent.
Add salt and sugar. Sugar is optional.
Stir well so that all the ingredients come together.
Add fried paneer cubes to the pan.
Toss the paneer cubes with the sautéed masala. Check seasoning, switch off the heat.
Finish by adding chopped coriander leaves. Stir.
