Dal Kachori

Take all-purpose flour (maida) and salt in a bowl.

Add ghee to the flour mixture.

With your fingertips, mix the ghee with the flour for a few minutes.

Mix till you get a breadcrumb like texture in the flour. When this is pressed, it should not break.

Begin adding the water, in parts.

Mix the water and begin to knead.

Cover the dough with a moist muslin or kitchen towel and let it rest for 30 minutes.

For the stuffing, soak moong dal in water for 2 hours.

Drain the moong dal well and add to a grinder jar.

Using the pulse option, lightly crush or make a roughly coarse mixture of the moong dal.

Next, melt ghee in a pan on low heat. Add turmeric powder and red chili powder.

Then, add cumin powder and coriander powder.

Add crushed fennel seeds or fennel powder.

Finally, add dried mango powder.

On low heat, mix the spice powders well. Make sure not to burn them.

Add lightly crushed moong dal, salt and asafoetida.

Mix and sauté the mixture on low heat for 3 to 4 minutes. Stir non-stop. To know more, swipe up!

After 30 minutes, lightly knead the dough and roll into a log.

Take a dough portion and flatten it with your fingers. Keep the edges thin.

Place the cooked moong dal mixture ball on the dough and flatten it.

Bring the edges of the dough together and join them at the center.

Press and flatten the top.

Gently roll the stuffed portion with a rolling pin to get a medium thick kachori. To know more, swipe up!

Heat oil for frying and keep the flame to a low. When the oil is just hot, add the kachoris. To know more, swipe up!

When the kachoris start puffing up, nudge them gently with a spoon.

When the base turns light golden, gently turn over. To know more, swipe up!

Fry dal kachoris till golden and crisp.
