Mint Rice

Rinse and soak basmati rice for 20 to 30 minutes. Then, drain and keep aside.

Add mint leaves, coriander leaves, chopped - ginger, garlic, green chilies, coconut, coriander seeds and cumin seeds in a blender jar.

Add water and blend to a smooth paste.

Now, heat oil in a pressure cooker. Add whole spices and fry till they splutter and become fragrant. To know the spice list, swipe up!

Add sliced onions, stir and sauté till they begin to turn golden.

Next, add the prepared paste, red chili powder and turmeric powder. Mix and sauté for 1 to 2 minutes.

Add chopped potatoes, tomatoes and green peas. Mix well.

Add drained basmati rice and stir gently.

Pressure cook on high heat for 2 to 3 whistles or till the rice grains are cooked.
