Masala Dosa

Rinse and soak urad dal, chana dal and fenugreek seeds in water for 4 to 5 hours.

Rinse idli/dosa rice or parboiled rice a couple of times. Keep aside.

Rinse flattened rice (poha) and add to the idli rice.

Pour water, stir and soak flattened rice and idli rice together for 4 to 5 hours.

Add drained urad dal, chana dal, fenugreek seeds and some water to a grinder jar.

Grind the dals and fenugreek seeds till you get a batter which is light and fluffy. To know more, swipe up!

Strain the flattened rice and idli rice well. Then, in the same grinder, add them, fresh water and grind. To know more, swipe up!

Grind the rice till you get a fine grainy consistency in it. To know more, swipe up!

Now, add the rice batter to the dals batter.

Next, add rock salt, sea salt or pink salt.

Mix the salt and both the batters thoroughly. Cover and keep aside to ferment for 8 to 9 hours at room temperature. To know more, swipe up!

For the potato filling, boil potatoes in sufficient water. When done, drain and let them become warm.

Rinse and soak chana dal in hot water for 30 minutes. To know more, swipe up!

Heat oil or ghee in a frying pan. Add mustard seeds and let them splutter. To know more, swipe up!

Add drained chana dal and sauté on low heat for 2 to 3 minutes or till it turns light golden or golden.

Add sliced onions, curry leaves, chopped green chilies and finely chopped ginger.

Sauté till the onions soften and turn translucent. Stir often.

Add turmeric powder and asafoetida.

Mix well and add water.

Mix again and simmer for 2 to 3 minutes or till the mixture thickens a bit.

Add boiled and chopped potatoes.

Mix very well. You can even mash the potatoes slightly at this stage.

Stir and simmer on low to medium-low heat for 3 to 4 minutes. Stir occasionally.

Switch off heat and add chopped coriander leaves. To know more, swipe up!

Stir well and keep the potato filling aside.

Spread some batter on a hot pan on low heat. To know more, swipe up!

Spread the batter in a circular way on the pan. On a medium heat, cook the dosa.

Drizzle some oil on the top and edges of the dosa.

Cover the dosa with a lid and let it cook.

Cook till its base becomes golden and crisp. To know more, swipe up!

When the dosa has cooked, place a portion of potato filling on the dosa. You can spread the filling a bit, if you want.

Fold the masala dosa before serving.
