Heat oil in a pressure cooker. Add cumin seeds and sauté till it splutters.
Next, add chopped onions and sauté on medium-low heat till it becomes translucent.
Add finely chopped ginger and chopped green chilies, mix and sauté till the raw aroma of ginger goes away.
Add chopped tomatoes, mix and sauté on medium-low heat till they turn mushy and pulpy.
Add turmeric powder, Kashmiri red chili powder, coriander powder and asafoetida (hing). Stir to mix and sauté for a minute.
Add chopped bottle gourd (lauki), mix and sauté for a minute.
Add salt.
Pour in water and stir well.
Pressure cook on medium heat for 3 to 4 whistles or till the lauki is cooked well and turns mushy.
Finally, add Punjabi garam masala powder and regular garam masala powder and mix well.
