Gajar Ka Halwa

Rinse and peel fresh red carrots.

Grate the carrots with a box grater or in a food processor.

Add the grated carrot in a heavy wok.

Pour in full-fat milk and switch on the burner.

Mix together the grated carrot and milk.

Cook the halwa mixture until the liquid is reduced to 75%.

Add ghee (clarified butter) to the halwa mixture.

Give it a good mix.

Next, add sugar.

Add cardamom powder as well.

Give the halwa mixture a good stir.

Continue to simmer on low heat, stirring often.

Simmer till the halwa mixture starts to thicken and reduces more. Stir at intervals.

When the halwa reduces to a pudding-like consistency, add chopped nuts and dry fruits of your choice.

Mix again and continue to simmer.
