Eggless Vanilla Cake

Add all-purpose flour, baking powder and salt in a sieve placed over a mixing bowl.

Sift the dry ingredients together and keep aside.

Grease a 7.5 or 8 inches round pan with some butter. To know more, swipe up!

Melt the butter in a small pan or bowl on medium-low heat.

Measure the melted butter in a ½ cup measuring cup. To know more, swipe up!

Add raw sugar (or white sugar), vanilla extract, curd (yogurt) and apple cider vinegar in another bowl. To know more, swipe up!

Add water.

Whisk briskly until all the sugar is dissolved and the curd gets evenly mixed. To know more, swipe up!

Next, add baking soda.

Whisk until the baking soda is mixed evenly. The baking soda will cause some bubbling in the wet mixture.

Add the wet mixture and melted butter to the sifted dry mixture.

Mix very well with a wired whisk. Break any lumps by tapping them with the whisk. Do not overmix.

It should be mixed to a smooth batter.

Place the pan in the preheated oven on the middle rack. To know more, swipe up!

Bake at 180 degrees C (375 degrees F) for 30 to 35 minutes. To know more, swipe up!

Check the doneness of the cake with a bamboo skewer. It should be clean with no sticky batter on it.

Place the pan on a wired rack for the cake to cool to room temperature, before you spread the jam glaze on it.

To make an easy jam glaze, add any sweet fruit jam, cornstarch, butter and water in a pan. To know more, swipe up!

Place the pan on low heat and begin to mix.

Keep stirring until all the ingredients have melted and evenly combined.

Simmer on low heat for 3 to 4 minutes or till the glaze thickens. Stir often. To know more, swipe up!

Start frosting the cooled vanilla cake with the prepared jam glaze.

Sprinkle some unsweetened desiccated coconut on top and cover the sides. This is optional.
