Chocolate Chip Muffins

First, line the muffin tin with liners or grease the muffin tin. Set aside.

Using a sieve, combine 1 cup flour, ½ tsp baking soda, and a pinch of salt.

Set aside the sifted ingredients. Next, preheat the oven to 356 degrees F (180 degrees Celsius).

Heat ½ cup water in a pan or microwave until it is warm. Next, add ½ cup of raw sugar. Stir until it dissolves.

 Next, add 3 tbsps of neutral oil to the water. Stir and whisk for 3 minutes.

Then add ½ tablespoon of lemon juice. Swap the lemon juice with apple cider vinegar or white vinegar.

Next add 1 teaspoon of vanilla extract or ½ teaspoon of vanilla essence. Mix again.

Mix the dry ingredients into the wet ingredients. Mix until combined.

Mix until the batter has a flowing consistency. Do not over mix.

Next, add ⅓ cup of chocolate chips to the batter.

Pour the batter into the muffin cups ¾ full.

Bake the muffins at 180 degrees Celsius (356 degrees Fahrenheit) for 25 to 30 minutes,
