Rinse and soak basmati rice in water for 20 to 30 minutes. Later, drain.

Slice capsicum and onion thinly, keep aside.

Add sliced onion.

Mix very well.

Sauté onions on medium-low heat till they turn golden and caramelize.

Lower the heat and add sliced capsicum.

Add chopped coriander leaves.

Stir and mix to combine the ingredients.

Sauté on low to medium-low heat for 3 to 4 minutes.

Add the drained rice and salt.

Gently mix the rice grains with the rest of the ingredients. Sauté for a minute.
