Besan Chilla

For the batter, take gram flour (besan) in a mixing bowl.

Add finely chopped vegetables and herbs - onion, tomato, ginger, green chilies and coriander leaves.

Pour in water.

Whisk till the batter has a lump-free, smooth and flowing consistency.

Begin cooking the besan chilla on a seasoned frying pan, cast iron skillet or non-stick pan.

Gently use the back of the ladle to spread the batter.

Cook the chilla on low to medium-low heat until you start seeing some air-pockets on the top.

You can drizzle some oil at the edges and all around while the chilla is cooking.

Continue to cook till the base becomes light golden.

Flip the besan chilla and cook the other side.

Continue cooking till you see golden spots on the besan chilla and it is evenly cooked.

Fold the besan chilla and get ready to serve.
