Baingan Bharta

Cut baingan (eggplant) on 4 sides or directions as shown in the picture. To know more, swipe up!

Gently put apart and check for worms or black spots. Discard the baingan, if you see any of these.

Next, keep the baingan for roasting on direct flame on the stovetop. To know more, swipe up!

Roast the baingan till tender and completely cooked. To know more, swipe up!

After the roasted baingan is cooled, peel the charred skin. To know more, swipe up!

Chop the roasted flesh of the baingan. To know more, swipe up!

Next, heat oil in a pan. Add finely chopped onion and finely chopped garlic.

Stir often and sauté the onions till translucent. Add chopped green chili and mix. To know more, swipe up!

Add finely chopped tomatoes, mix and sauté till the oil starts separating from the mixture. To know more, swipe up!

Add red chili powder and mix well.

Add chopped roasted baingan flesh.

Mix the baingan well with the onion-tomato masala. Add salt.

Stir to mix and sauté baingan bharta for about 4 to 5 minutes on low to medium-low heat. Stir often.

Once ready, add chopped coriander leaves and mix.
