Heat a kadai or pan. Add water in it.

Next, add sugar. I have used organic sugar. You can use regular/organic sugar or jaggery powder.

Heat the water and sugar. We just need to make a sugar solution.

Meanwhile, add ghee in a heavy kadai or pan on heat.

When the ghee is hot, add cashews and fry till golden. Remove and keep aside.

In the same heavy pan, add whole wheat flour (atta).

Stir well to mix.

Roast the flour, stirring continuously, on low to medium-low heat, till the color changes.

You will soon get an aroma of the roasted flour. Keep stirring to ensure even browning.

When the flour has turned golden, it will start to release ghee.

Then, add the bubbling hot sugar solution.

Continue to stir very well. Keep stirring continuously.

Keep stirring, so that lumps are not formed.

Next, add the fried cashews.

When the halwa consistency is semi-thick and ghee is also released from the sides, switch off the heat.
