sharing a simple recipe of stir-fried tofu in a peppery sauce. though the name says salt and pepper tofu, the salt added is what we generally add in recipes. whereas the peppers added are black pepper as well as sichuan pepper. the pungent flavors of both the peppers is the highlight of this dish.

for black pepper, its best to crush them and add. and if you do not have sichuan pepper, then just skip it. there will be some flavor loss, but still the recipe will taste good.

INGREDIENTS FOR salt and pepper tofu

(1 CUP = 250 ML)
  • 200 grams firm tofu
  • 1 tablespoon corn starch
  • 2 tablespoon sesame oil or any oil
  • 1 teaspoon black pepper, crushed
  • 4 to 5 schezuan pepper, crushed
  • 1 tablespoon finely chopped garlic (lahsun)
  • 1 tablespoon finely chopped ginger (adrak)
  • cup chopped spring onion whites or regular onions
  • 1 dry red chili (sookhi lal mirch) - broken and deseeded
  • 1 green chili (hari mirch) - chopped or fresh red chili, chopped
  • ½ teaspoon dry red chili flakes, optional
  • ½ teaspoon chopped celery, optional
  • 1 to 2 teaspoon soy sauce
  • ½ teaspoon rice vinegar
  • ½ to 1 teaspoon rice wine
  • salt as required
  • 1 to 2 tablespoon chopped spring onion greens

HOW TO MAKE salt and pepper tofu

  • chop tofu in cubes. before chopping, do press the tofu between two weights or keep a weight on top to remove excess water or moisture from it. 
  • dab with paper towels to remove the moisture from the tofu. take the tofu cubes in a bowl and sprinkle 1 tbsp corn starch on them. substitutes for corn starch are arrowroot flour or tapioca starch.

  • gently toss and coat the tofu cubes with the flour.
  • now heat 2 tbsp sesame oil or any oil in a frying pan.
  • pan fry the tofu cubes till they are crisp and light golden.
  • remove and keep aside. you can even keep the fried tofu on paper towels to remove excess oil.

  • now in the same pan, add 1/3 cup chopped spring onion whites or regular onions, 1 dry red chili (broken and deseeded), 1 tbsp finely chopped garlic and 1 tbsp finely chopped ginger.
  • on a medium flame, saute for 1 to 2 minutes or till the onions turn translucent.
  • then add crushed 4 to 5 sichuan peppercorns (crushed), 1 tsp black pepper (crushed) and 1/2 tsp red chili flakes (optional). stir well.
  • then add 1 to 2 tsp soy sauce. stir very well.
  • now add the pan fried tofu.
  • season with salt. keep a check on salt as soy sauce already has salt. stir well.
  • then add 1/2 tsp rice vinegar and 1/2 to 1 tsp rice wine (optional). stir again.
  • switch off the flame and add 1 to 2 tbsp chopped spring onion greens.
  • lastly stir and serve salt and pepper tofu as a starter or as side dish.

  2. I wanna make masala dosa and wanted some advice . I couldn’t find the comment box there so that’s why I am writing here. Actually I have whole urad daal and I couldn’t get split ones here . How can I make split ones from it . And also sorry for writing it here. Happy karvachauth too.

    • no problem harsimrat. i have closed the comments due to the ongoing diwali preparations. so less time. you can use whole urad dal. just soak them in water for 4 to 5 hours. then rub then between your palms to remove the skin off. the skin comes out easily and they will start floating in water. remove them and discard. then strain the dal and add to the grinder. happy festive season and karwachauth to you too.

  3. Hi dassana , thank you very much for your answers . As I could not see comments section in mawa cake , am writing here . One thing I didn’t understood is do you suggest fan with circle oven function or top and bottom heat element oven function ? Thank you .

    • yes closed the comments on some posts as busy with diwali preparations and karwa chauth today. i suggest oven with top and bottom heating element. with the fan option, the baking happens quickly and not is even at times.

      • As you suggested when I use top and bottom heating elements , the temp shud be the same as the recipe suggests right ?( I mean if a recipe calls for 180C , I shud also go for 180C and there is no need to reduce it for 160 or 170C) . Thank you .
