What is Cauliflower?

Known as gobi in Hindi, cauliflower is a member of the brassica family of vegetables. Its cruciferous relatives include cabbage, broccoli and brussels sprouts. 

Cauliflower is a large vegetable that resembles broccoli, but is most often white. It can also come in other shades, including a pale orange, purple, or bright chartreuse. I generally reach for white cauliflower because it is most easily available, but you can easily substitute any color for any cauliflower recipe.

What is the best way to eat cauliflower?

It is best to eat Gobi cooked. It is a mild tasting veg with hints of sweet nuttiness. Because it is so versatile, there are almost countless ways of eating this yummy vegetable!

Is cauliflower healthy?

Absolutely! Often used as a lower carb potato or rice substitute in the US, this versatile veggie also packs quite the nutritional punch. It is high in vitamins B6, C and K, as well as fiber, calcium, and folate, among other nutrients. 

Diets that include significant amounts of cauliflower have been linked to several positive health outcomes, including the prevention of cancer, increased bone density and improved cardiovascular health.

One note to keep in mind though: if you are currently taking blood thinners, beware of suddenly increasing your cauliflower consumption to high levels as the vitamin K may adversely interact with your medication.

How do I pick cauliflower?

Choose heads that have tightly compacted florets with a uniform color. Cauliflower should also be quite heavy for its size. Avoid gobi with any mushy spots as these are the first sign of spoilage. Also, while a faint sulfurous smell is normal, avoid any particularly pungent smells – this can be another sign of spoilage.

How do I store cauliflower?

Heads of cauliflower should be stored in a loosely fitted plastic bag in the fridge, and will last for up to a week in the crisper drawer. If you purchase cauliflower florets, the shelf life is generally shorter – I recommend using them up within 4 to 5 days of purchase. 

NOTE: If the tips of the florets are beginning to turn brown or grey before you can get to them, simply cut them off and discard them before preparing your meal.

Can I freeze cauliflower?

Yes, and it couldn’t be simpler. Unlike certain other vegetables, it is better to blanch cauliflower prior to freezing. Simply break or cut into florets (or smaller sized pieces, depending on how you plan on using it), blanch for about 3 minutes in hot water and then freeze in a single layer.

Once frozen, transfer to an airtight container for up to 6 months. As an added bonus, baked or roasted cauliflower can be made directly from frozen, no need to defrost!
