Herbed potato salad recipe – simple and easy salad with potatoes and mixed herbs.

herbed potato salad recipe

This is a very simple potato salad that I make at times. Quick to assemble, if you already have some boiled potatoes handy. There is no dressing as such in the recipe and you just need to mix and toss everything. This salad can also be served as a starter snack. Also goes well with a side of soup and some breads.

For the herbs you can use your favorite herbs or your choice of fresh herbs. I have used a mix of basil, parsley and celery. If you live in parts of India, where you do not get fresh herbs like basil or parsley. Then use Indian herbs like coriander leaves and fresh mint leaves in the salad.

Always use fresh herbs. Also rinse the herbs very well and you can use a salad spinner to dry them or just pat them dry with a kitchen towel.

Potato is a favorite of adults and kids alike, this salad is liked by everyone. I have also shared my take on the classic American Potato salad recipe which is also easy to make.

  1. Hi Dassana, I tried this Potato salad today and it turned out really awesome. Thanks for all the delicious recipes.? And here, I have used dried Italian seasoning not the fresh once.Is it ok if I use dried once. And my potatoes went flour like and I dint get nice shaped potatoes like yours. Can you give me some more cooking tips please.5 stars

    1. you can easily use dried ones. fresh herbs are not easily available everywhere, unless you grown them in your balcony or terrace ?

if the potatoes are cooked too much, they will become flour like or pasty. it depends also on the quality of potatoes. not all potatoes become flour like. just cook them till they are tender and done. usually i pressure cook medium sized potatoes for 2 to 3 whistles. you can also cook them in a pan or in a steamer.
