to make the cooking go faster, its better to blanch or half cook the cauliflower in a microwave. i preferred to blanch the cauliflower.

ingredients (1 cup = 250 ml)
  • 1 large cauliflower, chopped into florets (gobi)
  • 2-3 tablespoon olive oil
  • 1 teaspoon black pepper powder (kali mirch powder)
  • ½ teaspoon paprika or red chili powder
  • 1 tablespoon herbes de provence
  • salt or black salt as required
how to make recipe
  1. blanch the cauliflower for 5-7 minutes in hot water.
  2. mix the olive oil, herbs, all the spice powders and salt together.
  3. add the cauliflower florets to this mixture and gently toss so that the mixture evenly coats all the cauliflower florets.
  4. bake in the oven for 30-35 minutes for 180 or 190 degree celsius.
  5. garnish baked cauliflower with basil leaves and serve hot or warm with a veggie or cheesy dip. you can also serve baked cauliflower with any indian chutney or just plain curd or raita.

how to make baked cauliflower recipe:

1. chop the cauliflower into florets. rinse them in running water few times and then blanch them in hot water for 5-7 minutes.

2. in a bowl or in a baking tray drizzle some olive oil. add herbes de provence, black pepper, paprika and black salt. if  herbes de provence is not available, you can add your own choice of dry herbs.

3. mix the herbs and spices and salt.

4. add the blanched cauliflower to this mixture.

5. and gently toss so that the olive oil -herbs- spice mix coats the florets well.

6. bake for 30-35 minutes on 180 or 190 degree celsius. when you see some dark brown spots on the cauliflower florets, it means the cauliflower is done.

7. garnish baked cauliflower with some chopped basil or any herb you like.

8. serve baked cauliflower with any dip you like. i served it with hummus and pesto. and the baked cauliflower was great with both of them.

  • Dassana in absence of an oven can we bake it in a microwave, will i get this same crispyness??



    • dear neela.

      you won't get the same crispiness in a microwave oven. in the microwave, the cauliflower will get cooked, but there will not be any browning. if are ok with no browning, then you can cook the cauliflower in the microwave. if they become or look dry while getting cooked, brush some olive oil on them. you can try and let me know.

      you can also grill the cauliflower florets. if you have an electric grill or if you have a grill pan which can be used on a gas stove, you can grill the cauliflower in it.

    • hey shri, this is a stone tray from manipur used for cooking and serving. works even in oven and microwave. these stone pots are on the expensive side and have to be handled carefully. if they fall, they break.
