Tomato Cucumber Sandwich has always been a favorite of mine. I remember I used to ask my mom to make them, when we used to go for picnics. She would lovingly make them and nicely wrap them in aluminim foil. They would not get mushy or moist, even after 3-4 hours.
These sandwiches can also be made for children’s school tiffin as well as wrapped and taken while travelling. However, its better to consume them within 4-5 hours.
Tomato Cucumber Sandwiches can also be made for breakfast or as an evening snack. Its a quick, simple and easy, no fuss sandwich recipe. Its so quick that you could also make these when you are in no mood to cook and want something nutritious and filling to eat. i would also recommend you to try bombay toast sandwich and bombay veg sandwich.
Tomato Cucumber Sandwich recipe details are below:
- 8 slices of brown or white sandwich bread / or 1 sandwich loaf cut into slices
- 1 tomato
- 1 medium size cucumber
- 1 tbsp freshly crushed black pepper or pepper powder
- salted butter
- salt (optional)
- Finely slice the cucumber and tomatoes
- Trim the edges of the bread.
- Apply butter evenly on the breads and keep aside. Apply a slightly thick layer of butter on the bread, if you are making the sandwiches for picnics, tiffin or travel.
- Arrange firstly 4 slices of tomato on the buttered bread. Then arrange another layer of 4 cucumber slices.
- Sprinkle ¼ tsp of pepper powder or freshly ground pepper on the sandwich.
- Season with salt. This is optional as we are using salted butter. However, if you are making this sandwiches to take during travel, picnic or for your child’s tiffin box, then avoid salt. As the tomatoes and cucumber will release water due to the presence of salt and thus the sandwiches will become soggy and moist.
- Cover with another slice of buttered bread.
- Cut the tomato cucumber sandwich diagonally into 2 or 4 parts.
- Serve with potato wafers and tomato sauce.
- If making for tiffin box, then wrap the sandwiches in a cling film or aluminium foil and place keep it in the tiffin box.

You can apply a little coriander or mint chutney after spreading salted butter on the bread.
Yes Sunita. One can apply a little coriander or mint chutney. It tastes good. At home, I have applied mint-coriander chutney on these sandwiches. When taking out, one needs to apply very little chutney, so that the bread does not become soggy.
I have not mentioned the mint-coriander chutney part, as this is my mom’s recipe and this is exactly the way she makes it.
