we often use soy sauce in our foods. in india we use soy sauce in the indo chinese recipes like veg manchurian, gobi manchurian, veg fried rice, chilli paneer, schezwan fried rice, veg spring rolls etc.
its always better to use a naturally fermented soy sauce. most of the other soy sauces are chemically made.
i use the kikkoman brand of soy sauce. this is the only naturally fermented soy sauce available where i live.
if i am not wrong i think this is the only naturally fermented soy sauce brand available in india. someone can inform me on this as i do not know what is available in other indian metros and cities. few year back, it was difficult to get this soy sauce brand in most of the super stores. but now its more easily available.
i have used and am still using the kikkoman brand. it is very different from the chemically made soy sauce that i have used before.
using this fermented soy sauce, was a revelation for me in terms of the nutrition facts, flavors, aroma and taste… a soy sauce which has been fermented and not just some chemicals mixed with msg (mono sodium glutamate).
you can actually smell the fermented aroma in a soy sauce which has been naturally fermented. it tastes like fermented soy beans sauce or soy paste. if you have had fermented soy bean paste or sauce, you will know what i am trying to convey to you.
you also get gluten free version of soy sauce. so if you are allergic to gluten then buy a gluten free soy sauce. i have seen this in good super market stores in india as well. but if you are not able to get them in super stores then you can buy them online.

lastly, if you don’t make lot of indo chinese recipes then don’t buy a big bottle. buy a small bottle. because usually in every recipe we use around 1-2 tbsp of soy sauce. also check the expiry date of the bottle.
