kalimirch baingan recipe - simple recipe of eggplants with pepper

ingredients (1 cup = 250 ml)
  • ½ kg eggplants, small or medium size eggplants (baingan or aubergine)
  • ½ teaspoon turmeric powder (haldi)
  • 1 to 2 teaspoon black pepper powder
  • salt as required
  • oil as required
  • a few coriander leaves for garnish (dhania patta)
how to make recipe
  1. rinse the eggplants very well in water. chop or dice them and keep them in salted water for 15-20 minutes. if they are very small brinjals… then you could just slit them like we do for stuffed brinjals.
  2. in a pan heat oil… when the oil becomes hot… add the chopped brinjals.
  3. saute the aubergines for 4-5 minutes on medium flame. now add the turmeric powder and black pepper powder and mix it well with the aubergines.
  4. saute the aubergines on a low flame. this is how they looked after 7 minutes.
  5. cook them till they become tender. finally season with salt.
  6. garnish with coriander leaves and serve kalimirch baingan hot with rotis or bread.

tips for kalimirch baingan recipe:

  1. to make the dish more fiery and peppery add some more pepper powder. you could also use freshly crushed peppercorns.
  2. you could even add some garlic to give this baingan recipe a garlicky flavor and taste.
  3. to make this dish in european style.... just use olive oil... and white or black pepper powder. you could eve add a dash of paprika. when done, garnish with fresh parsley leaves.... enjoy...
