Homemade Mayonnaise Recipe

Mayonnaise is one of my favorite sauces. I sometimes have it as a dip with french fries, or as a spread on sandwiches and burgers. Amongst salads, I like Russian Salad and as it is made with Mayonnaise, its one of my favorite salad.

One can easily make basic mayonnaise at home. Making mayonnaise at home ensures that it has no preservatives or additives added to it. I know it much better to buy a ready made bottle of mayonnaise. But trust me, there is nothing like making homemade mayonnaise with care and love. Its easy, simple and quick.

Ingredients you will need for the Mayonnaise:

  • 2 egg yolks
  • 1 tsp mustard powder
  • 2 tbsp powdered or castor sugar
  • 4 tsp vinegar or lime juice
  • 1 or 1 and half cup salad oil or olive oil
  • salt and white pepper to taste

Method of making Mayonnaise:

  1. Mix all the dry ingredients in a bowl.
  2. Add the egg yolk and blend well.
  3. Add salad oil drop by drop and keep on whisking the mixture.
  4. When it becomes thick, add a little vinegar or or lime juice and blend well
  5. Then continue adding salad oil and keep on whisking. Add the rest of the vinegar or lime juice. Once all the oil is added and mixed in, the mayonnaise should become fluffy and thick.
  6. Store in the refrigerator and use within a week.

I would like to try the mayonnaise recipe. Can you tell me what is mustard powder? Is it the skinless one used in pickles?

mustard powder is yellow mustard seeds which are ground finely. the split yellow mustard what we use in pickle, even that can be ground to a fine powder. ready made mustard powder is also easily available in many shops.

I tried the same in mixer not in blender. it wasnt come out well :-( I threw it out since egg smell dominated more. Please suggest me how to prepare it in a better way.

hi priya, mayonnaise is an emulsion where the olive oil and egg yolks permanently combine with each other and do not separate. i would never suggest using a blender or mixer for making mayonnaise. you have to add the oil drop by drop while whisking the eggs yolks. if you add the oil too fast, the emulsion breaks. this is one of the first recipes that i learnt in my home science classes and we were actually told to add the oil drop by drop and not even pour little quantities of the oil.

since you made in a mixer, thats why the emuslion was not formed and the smells of the yolks were dominant. i hope you used just the yolks (the yellow part of the eggs) and not the whites.
